@adham hussein The first evidence of cooking stacked meat on a spit is from Ancient Greece, after the conquering of the Byzantine, the Ottomans adopted the cooking method from Anatolian Greeks. This ancient Greek method of cooking was called "obeliskos" and there was a pita dish called "kandaulos" the way gyro or souvlaki pita is served today. References survive describing street vendors during the byzantine empire selling souvlakia with pita in Constantinople in the 12th century and another excavation shown a apparatus in Athens from the 11th century that was used to cook meat on a horizontal spit. Who created cooking on a vertical spit first is all hearsay and both Greeks and Turks claims they were the first, from evidence it was either first invented in Thessaloniki Greece or Bursa Turkey, historians believe that it was most likely invented in Bursa by the İskender Efendi. The first Gyro recipe is unknown since the word souvlaki was used as a reference to all foods that included stacked meats cooked on a spit and did not emphasize on the cooking method or recipe.

The name gyros in Greek means "round" llike the "around the world in 80 days", because it gets roasted in circles as it spins around itself!

Tzatziki is optional in a gyros. In Greece we ask for tzatziki as an extra. However it's delicious, because the yoghurt and the garlic counterbalance the fat of the meat. Gyros is usually made from pork belly and is more greasy. I guess the neck he used is even better. Tip: don't put zucchini in gyros. French fries, tomatoes, onion and tzatziki or mustard.

in Greece you use Tzatziki , we in the Mid east and Turkey use Tahini , Turkey copied Gyros and made Shawerma , then the Mid east copied it from Turkey , we also use neck or thigh meat , no pork though ! only beef or chicken .and you're right concerning Zuchini , tomatoes , onions, parsley & Tahini is our staple , thanks for the info

Anything that originates on a spit does not originate from Turkey!!! Anything that starts with Shish - is, for example, shish taouk etc have turkish origins, its very possible the greeks were conquered by the ottomans or an empire of similar stature and region and thats why they have gyros....
