Hey Mike. Forgot to share a secret tip with you. Back in the day, my South African mate would clean up on yakkas. He would fillet yellowtail and skin the fillets. He then cut very small slithers of yellowtail flesh and used them on a small ultra sharp long shank hook. To stop the yellowtail from drying out he would dampen a face washer and fold it over with the pre-cut yellowtail slithers inside. Used to outfish pilchards any day of the week but had to be fresh and you had to keep it moist (regularly dampen that face washer). Can guarantee you, no-one is using this method but it is gun!
