My mother used to use the fish head pieces at the bottom as this prevents the good pieces getting burnt. I use curry leaves at the bottom. And use the oven to finish off.
I prefer without turmeric. We can also have one layer of Curry leaves at the bottom and lay fish on that later. Yes, we do have curryleave trees in Melbourne, even in Sydney, Perth, Brisbane and in Adelaide too. We use either clay pot or a slowcooker.
