I love the video and I'm really beginning to understand what the software does. But I want to ask a question about camber and camber gain. Am I to understand that the more camber that is maintained at high lateral G the better grip. Because I would of thought that when the wheel hits 0 degree at 2 lateral G the most contact patch is being created there for more grip?

The amount of camber and camber gain required is a function of how much the tire carcass deforms when subjected to lateral loading. This determines how much of the tire remains in contact with the racing surface. If you watch Episode 4 it talks more about camber and camber gain.
