You would benefit greatly by planting many different types of perennials that attract both pollinators and beneficial insects that would control your pests . It would mean less spraying, better pollination, and less pests.

I live in Kentucky as well, apples, pears, peaches, plums, or apricots all do well in our area. You can also do strawberries, raspberries, and blackberries as a side harvest.

I had a question about U-Pick. You said the customers would pick apples then drop some on the ground they don't want. Can you put Bins out there and ask customers to put unwanted apples in those bins? then you can use them for Apple Cider, and have less waste.
