The Modena Balsamic Vinegar tour! We used to live an hour away from it, but never actually went (still regretting that one). Love the historical vignette at the end of the tour. Great video Eric!

In Emilia Romagna you can eat very well even in a gas station. I'm from that region and I can assure you that you don't need to spend $500 at the Osteria Francescana to eat super well. On this note I would like to point out that the balsamic vinegar dish you had was probably not 100% the "aged balsamic vinegar" unless you paid $ 500 for that dish. try to buy a bottle of real balsamic vinegar and you know waht I mean. Nevertheless there are excellent vinegar reduction that taste pretty good. I would like to point out that neither the Blognese ragu' nor the lasagna has any tomato sauce in it.

Aaaahh, making me want to go back to Italy!!! That pasta looked so delicious and I love balsamic vinegar. I sampled a lot of it at the markets there, haha. Did you take your dog to Italy also??? We did for a month this year. Great video! c/t

You should totally go back! Sometimes you just can’t beat the classics. That actually wasn’t my dog. It was the owner’s at the acetaia. Turns out the dog passed away recently 😔

Nice video! It has a LOOOOOOT of information, I was kinda shocked haha :D I think this type of video might benefit from shortening the length a bit (whether you split it up into different parts or just condense it to fewer events you show), because it's kinda hard to follow a constant 20min stream of information. I agree actually. I usually limit my videos to around 12 min. Because I know people don’t have the desire to watch for very long. Media consumption these days are catering to short attention spans. Which is a shame really. But gotta give viewers what they want! Thanks for the feedback :)

Tortellini.parmiggiano reggiono and aceto balsamico Is typical of Modena no Bologna

No way, the original "tortellino" is a truly bolognese stuff. In Modena, they fill them in a slightly different way and the size is bigger. The Parmigiano reggiano, is produced in a restricted area only, from Mantua right side of river Po to Bologna left side of river Reno, including Parma and Reggio Emilia. Just balsamic vinegar is a true modenese speciality.
