I think you should mark -5V as ground. Also, the light side should be connected to the center connector which is common and the right hand one that ls normally closed. You might want to redoo this vid with a few corrections. It was pretty good though.

For drive more relays you can use the I2C protocol of your ESP8266 module, with an MCP23008, for example. With this IC you can manage 8 relays.
