Establishing Topology in a Geodatabase

Great video! What would be the most efficient way to manually digitize these land cover/type? Using a single shapefile with a “Landcover” field, and snapping each polygon to/with another? Or using multiple shapefiles and tools such as “erase”, “merge”, “clip”, etc? Thank you!
