if you assign membrane no torsion will be induced in the supporting beam...whereas thin shell and thick shell options introduce torsion to beams

no...that is for liveload...it doesnt replace deadloads

It will only replace that same type of load. If you assign a dead load for example and click replace, it won't replace a live load, only an existing dead load.
