Honestly, I didn't realize Julia Child was an American. I never paid close attention. "She joined the women's cooking club Le Cercle des Gourmettes, through which she met Simone Beck, who was writing a French cookbook for Americans with her friend Louisette Bertholle. Beck proposed that Child work with them to make the book appeal to Americans. In 1951, Child, Beck, and Bertholle began to teach cooking to American women in Child's Paris kitchen, calling their informal school L'école des trois gourmandes (The School of the Three Food Lovers). I LOVE Mexican food, since I took Spanish all 4 years of high school & was in Spanish Club & Spanish Honor Society. Sour cream is my BEST FRIEND to lessen the spicy taste.

Cast iron is the original nonstick pan. It's why it's important to season it, also it keeps it from rrusting.

Seasoning doesn't stop rusting it makes it non-stick. Drying is completely in the oven after cleaning it (don't use soap), reapplying oil, and then throwing it in the over for 30 minutes to dry.

Some was my mother’s, some my grandmothers, and some Lodge that I bought new and seasoned myself (I know they claim it is seasoned when you buy it, but better safe my way. I do Not re-season every time. I swish it out and use hot water and a plastic scrubber to get anything off the finish and wipe it with a paper towel. Then I set it on a burner, stand there until it gets hot, take it off the heat and allow it to cool and put it away. I occasionally wipe the inside with oil or Crisco for a light new coat. Nothing so hard. It doesn’t rust and if I get to wiping it out immediately after using no sticking ever!

As far as I know it's not that common in America to bake cornbread on top of chili like that, but it is common to serve chili and cornbread together. Most people just make them separately. But this way you have one less pan to wash, so I see the advantage.

First off, that bell pepper is nuts! I am jealous. I've actually never seen chili with the bread baked *on* it. That's pretty rad. If you want less liquid I recommend letting it reduce more and make the flavor even more intense. You can add tomato paste too. Or both! Worlds your oyster! Now that you know how to make it, you can make it how you want.

In America, we'd more likely call what you made "chili pie". It looks fantastic. But the advantage of making the chili and cornbread separately is you can spoon up a bowl of chili then top it off with shredded cheddar cheese, fresh diced onions and a dollop of sour cream. Then have a tall beautiful chunk of cornbread topped with delicious, melting Portuguese butter! Then break chunks of cornbread into the chili bowl and eat them together. Sooooooooooooo GOOD! Oh, and less cumin is better as it is a very powerful herb and will take over and dish it's put in.

Actually, all those spices come together to make something similar to taco seasoning. Chili powder is a specific chile, the ancho chile, that has been dried and ground into a powder. So your chile is closer to goulash from Hungary, minus the pasta. I hope someday you can find some chile powder.

You can adjust the spiciness of the chili by adjusting the amount of cayenne pepper & cumin that you use. And yes, chili is a great comfort food for cold rainy days or snowy winter days like we have been having here lately. It's a dish that is not only filling but warms you up.

If it's a little spicy for your wife, have some sour cream for her to put on top to lessen the spice. If they don't sell sour cream in your area you can make it. 1/4 cup milk, 3/4 teaspoon distilled white vinegar, 1 cup heavy cream. Combine milk and vinegar and let stand 10 minutes. Pour heavy cream into a jar. Stir in milk mixture, cover the jar, and let stand at room temp for 24 hours. Chill in the refrigerator before serving.

I make chili as often as my family will allow me. In quantities that last three of us a week. I like a mix of diced, whole, and puréed tomatoes, a mix of beans, sour cream, shredded cheese, and fresh green onions on top. As always-bacon included where possible. Also, a nice mix of regular beef and chorizo is amazing.

I second that! I use my grandmother’s cast Iron pan she got when she was married in 1928! Almost 100 years old and I use that one almost exclusively! Cooks great, heavy as all get out but still better than my new set of pots with their fancy coating and non stick properties. None can go from stove to oven like my cast iron can!

Perfect! I have fixed the cornbread both ways-on and off the chili. Both are good. But I suggest you put a bit of sour cream, grated cheese, and ripe olives on top. The sour cream cools the spice. Great job!

That is the Texas chili recipe. In New Mexico, we make it with red chile puree and green chiles (chili is the recipe, Chile is the pepper - grown in New Mexico), pinto beans, onion, garlic, cumin, salt and pepper. No bell pepper!

You have no idea how much you inspire me to get in the kitchen and play! Thank you so much! Have grown up making chili and cornbread but have never tried your recipe…BUT I will! When I was a mother with small babies I couldn’t eat spicy as it would bother my kids. Also, some people just don’t tolerate spicy as well. They like the flavor but can’t take the heat so you learn to balance it out and as other’s have said here. If you give them a dollop of sour cream and avocado on the side to cool things down with a little cheese sprinkled on top it can help. I love the love that shines from your wife’s eyes when she tries your creations! No matter how long the day has been she exudes love for you and your baby….just as you do….and your little one when he looks at the two of you he shines too! Your comedy is so incredible. Nice thing about Chili is I make it different just about Everytime. I made it with 3 habanero peppers and 5 jalapenos and a can of chipotle peppers blended fine. Black beans are my favorite. Onions also blended fine and 1/2 chopped. Garlic powder and garlic paste. Going to used chopped tomatoes in my next pot of chili but was pretty good with just a can of tomato sauce. I also use lemon juice and a little apple vinegar and a little beer.

Thank you, André for this. I have literally been in a funk the past few days. Your energy is infectious. I didn't have ingredients to make chili and cornbread, but I did make an apple pie. I absolutely love that we get to see your wife taste your creations. The amount of confidence you have gained is incredible. As well you should. You definitely had skills before you started this, but, you don't hesitate, you just do. And you did two things that stand out - the addition of the tomato paste and the comment about what you would do differently at the end - that is the sign of taking charge. Know what you like, adapt, adjust. Chili is one of those dishes where people will defend their method to the death. To that I say, take the advice but don't take attacks that may come because of die hard chili folks. I would eat what you made...with a smile...and ask for seconds, I am sure of it. It looked amazing. Next time, I might try cooking the cornbread with the chili. Never done that before. I've seen it a few times though.

Only thing missing is some shredded cheddar cheese.. yum! Chili and cornbread are my favorite to eat during fall/winter 😊

Like all American food, this is a starting point and you can make it your own. I like this with a bit of cheese on the top. American goulash is a natural continuation of the chili theme.

As well maybe try to substitute local produce/spices that you believe may make a new nummy taste to any of the dishes. That is how we all do it. That is why one comfort food here can be made slight different across the states. Again, most of these dishes were thought up and became a staple because of hard times when people needed to make a meal last as long as they could and feed many people (they used what they had locally to use).

I love ham and (white navy) beans with cornbread. If you like the cornbread flavor you might like mush (cornbread pancakes) with syrup and bacon.

You can put more cornbread but don’t do less liquid. Unless you really want to. I made a huge pot last week we like our pretty spicy. Second day of chili is even better. We do regular chili the first day with cheese and sour cream as toppings, second day with macaroni “chili mac “ then as a topping for hotdogs the third time. By then the pot is gone. I think you did great. Love that you added corn. That is really the secret to American cooking. Make it how you want too, how you like it. Love your cooking shows and when your wife tries it.

As a Texan, I can tell you that chili has no beans as the original version of chili is a Mexican dish called chile con carne. Many people started adding beans as a cheap way to extend this meal and feed more people. Here in this part of the South, this is called a "tamale pie" which is basically chili (no beans) with cornbread or well seasoned tamale masa on top LOL

Chili con carne just means chili with meat, and the red variety is usually like chili colorado, and you can have chili de dos frijoles or any combination with red or green chili sauce, it's just a meat stew. Chile is usually reserved for the country named Chile, or specifically Hatch Green/Red Chiles, because New Mexico is a bit different. Chili (Texas) is often called Texas red, and it's not a particularly hearty chili, it's just meat chunks with red sauce, and people try to make it spicy so it's more interesting. It's a Tex-mex staple, but usually latinos usually put chili colorado in burritos or tacos, with other items so there is more texture and flavor variety. Chili (American) is usually made with ground beef instead of chunks, it's often mass produced and canned or frozen, and can have beans or no beans and usually paired with cornbread or fritos. Chili (Cincinnati) has more of a greek spice flavor profile and it's often put on hotdogs or even pasta.

As a southerner, don't listen to a texan on chili! Just cause it's traditional don't make it good, and let me tell you, slow-cooked chili made with beans is DAMN GOOD! Definitely not just a way to extend the meal, although it does that, too! If you're gonna make slow-cooked chili with beans, i'd recommend using pintos. Pinto beans go great with cornbread even before you turn it into chili!

I've had Mexican food in other states that call themselves "Southern" and it is GARBAGE. I usually sprinkle shredded cheddar cheese on top. Add it about half way through baking. Yum. Don't cut back on the liquid, it will make it too dry.

If you have access to Fritos (corn chips)...add those to your chili with some cheese and you have a Frito-Pie (sometimes called chili pie). Texas chili has no beans. Many times chili and pinto beans beans side by side on a plate.

Your cooking shows are so much fun to watch! You've come such a long way. When you made your deviled eggs, you were so nervous and wondering if you were doing everything right. Now you have so much confidence. You know what to substitute when you can't find an American ingredient, and adding things you like etc. Don't be sad about missing out. You still have lots of life left to enjoy it now. And Santiago will enjoy it his whole life. Well done and keep cooking! BTW, very much enjoy your other videos also.
