When my youngest son was married on a ranch, the rehearsal dinner meal was a whole smoked pig, cooked in a pit and served as pulled pork. The leftovers were frozen and a year later we are still enjoying smoked pulled pork. Hawaiians also cook a wonderful pit pork. Bake a large potato, split open and add butter sour cream, pulled pork, barbecue sauce, cheddar cheese; with a sprinkle of green onions. Also used to make great tacos, and added when cooking pinto beans.

For non-butchers, the pork 'butt' (Boston butt) is NOT the back end of the pig. It's the shoulder. It's complex and hard to carve so slow-cooking and pulling the meat apart is perfect. So delicious! Sliced raw cabbage adds so much texture and freshness to the sandwich. Cole slaw is good too. NO BBQ SAUCE, just the reduced juice. Ciabatta roll is perfect and stands up to the wet.

You should have added green bell pepper. Green bell pepper if you cant use a smoker provides the kind of flavor smoke does. I have had many people ask me how I make my pulled pork sandwiches. Maybe you can try it on your own time. I just add diced onion, diced green bell peppers, and sweet baby rays bbq sauce. You can add minced garlic if you want.

In the US, we have something called liquid smoke. For those of us elderly, it is added to slow cooker, Insta pot, or braised meat to giving a smoky flavor. It is extremely strong so discretion is necessary. I use it to make Kalua pork. Not authentic but gets me close. I am 75 and my husband 77 with severe health issues. It will be the closest we get, !ol

That pulled pork looks great. Using the juices is absolutely the correct thing to do. If you put them in the refrigerator overnight, all the fat will come to the top, which you can remove, and toss out, or, use it to cook things like eggs or vegetables in. The liquid you can then put in a pot, and reduce down into a sauce that is better on the pork than any barbecue sauce.
@Angi_Mathochist
@Angi_Mathochist 7 күн бұрын
Yeah, I would say just mix enough in with the pork to make it a nice moist consistency, but not drippy. Then store the rest. Use some for dipping juice for your first sandwiches and then take the fat off the top of the rest tomorrow and use the fat for cooking and the juice for sandwich dipping or flavoring gravies or soups or whatever you're making in the next few days.

Andre, I am from the state of North Carolina, arguably the state most associated with pulled pork, often simply called Bar-B-Que or BBQ here (we know that this is also the name of a whole range of foods and how they are cooked, but we still simply refer to it as such). We take deep pride in our BBQ culture. There is a deep and rich history of pulled pork that runs through our veins and though we have rivalries over who makes it the best, we all love to sit down and enjoy a good sandwich just as you did and I am happy to say that yours looked fantastic - outside of a bit more charring that happens during the grilling process, your dish turned out like a picture-perfect example and looked like a sandwich I would get from a family-owned restaurant with decades of experience. The slaw also looks really good but you can adjust it however you would like because as simple as slaw may seem, there are many varieties and styles preferred by all - some like it creamier, some like it with more vinegar; some chop it much finer while others like it chopped large as you did. We even have an almost entirely vinegar based version which is commonly paired with fish which may go well with some of your Portuguese seafood dishes. Now you just need to pair this with some Potato Salad and something we call hush puppies which are little pieces of deep-fried corn batter and similar to your Croquetes but with no meat inside, somewhat similar to Falafel.

As was the slogan for old Hardees commercials back in the day, "If it doesn't go all over the place, it doesn't belong in your face"! I make pulled pork all the time, and my family loves it. All I do is get the pork butt or shoulder and book in a crock pot till it comes apart like yours did. I rake it with forks, and then I put on a few big squirts of Sweet Baby Ray's Smoked Hickory and Brown Sugar BBQ sauce. Just keep raking and when the sauce isn't covering the meat, add more. Put in enough so that every bite possible is coated in BBQ sauce. Then I just fork it onto hamburger buns or bread and eat as is. The leftovers, if there are any, I tend to put in goulash, casseroles with potatoes (I make a variation of Shepherds' Pie with it), or even macaroni and cheese for that added punch. Very versatile, always delicious!

Excellent trial run. - After you shred the pork, put it in a shallow dish, pour as much of the jus from the cook into it as you want. Get it sopping wet if you want, the bread will just soak it up anyway. When cold, will get waxy, when reheated, will be juicy again. - Look up "Big Three" BBQ sauces. Tomato, Vinegar Pepper, and (best) Mustard. - Try Yellow Mustard, Honey, Liquid smoke (very little). garlic powder, (+experiment with what you like) - Liquid smoke is good, but better to use in sauce than meat if not using a smoker. If you mess up, sauce is gone, not meat. Some very good BBQ only put smoke in sauce, bake meat. Smoker not necessary for "good," is better but can cheat with oven. - Take your shredded pork, put in bowl. Add your favorite BBQ sauce (Mustard) and mix thoroughly. Fully flavored BBQ, no need to spoon pig juice over top. - Put your BBQ sauce container on lid so it is ready to dispense, not upright like heathen.

My neighbor's Portuguese, but didn't know how to cook their food, and we wanted the real deal. So I helped her drive to her Aunts home in Rhode Island an 8 hour 16 minute drive (535.2 milles). We learned how to cook some things there. Also went to some stores where we could buy some food. The best thing was the home made rolls and bread! It melted in your mouth! I really enjoy your trying different American foods. We really like flavor. I was glad to see you got a Dutch Oven. It is great isn't it. The only thing I do different with the pulled pork sandwich is to put the BBQ sauce in with the meat before you put it on the sandwich. Not on the bottom of the roll. Even if you just make sure you mix it in one sandwich, you want that flavor through out the sandwich. I was thrilled you added the coleslaw on top, many people don't add it, and it really makes the sandwich! If you can't use the broth right away put it in the freezer, just remember to have a couple inches at the top as liquid will swell a little, and could pop the lid off. Thaw it the day before you will use it. Never throw it out! Also save the bone with the broth, or just put it in a bag to make your own broth later or soups. Gives it more depth of flavor. When the soup is ready you can take the bone out and toss it then. I really enjoy your videos, you learn fast, and don't back off from something that takes more work. Many Americans won't even try! They just buy it already made. However, with Covid, I think many are starting to cook again. Blessings from Western, N.Y.

Hey Andre, I am both proud and jealous of you. Proud for embracing the american spirit of "that's cool, let me try it". And you did a professional job with it being your first pork butt and being first time with a Dutch oven. I'm jealous of your first time trying pulled pork. I have been eating it for years but I almost always enjoy it like the first time. Also great job with the "slaw". Depending on your tastes you can add alot to it. More mayo (good choice with the Hellmann's, only one better is Dukes) to make it creamer, less mayo/vinegar and add raisins for a sweeter, and a little mustard and pickled jalapeños juice to make "hot slaw" ( MO, TN, SC,KY), it's a local verity. Thank you for your always upbeat, inclusive, and respectful content. It is a great way for me to start my day while drinking my morning coffee. Lastly. MANY MANY people have many many opinions on what is the best smoker and here is mine. Although fire based smoking is "taster" with your limited space and need to "do it right" look at a mid size electric smoker with a chip tray. They help to take out ALOT of the beginners mistakes, keeps the heat regulated better, can easily be moved around or transported to a party, and are much easier to both monitor and master. PLUS since you are "the only one" doing that around you expect many people to be drawn to the smell, wanting you to make them one, or always being asked to bring to a party, so you can get some "cheap tools" that will mostly allow you to "set it up and walk away"

Food shared between cultures was my favorite part of my 21 years in the US Army (other than meeting my Honduran wife of 20 years and having our children). I’m an American who’s moms side immigrated from Italy and my dads side was from backwoods Tennessee, I’ve lived all around the world during my service and got to meet so many amazing people, food was always the glue. I remember marching through the mountains in Korea and coming across a Buddhist Temple, they all came out and had us in for lunch when I was 18 years old. Many other similar stories and am currently 45, we love mixing a little bite of everything people have shared with us in cooking and there is always something new to try❤ its really hard to not get along when you are stuffing yourself with good food. God bless you and your family brother❤

Thank you for not skipping any steps! North Carolina approved! It might take time, but it gives you days and days of food. You can put the meat back into the juice and use tongs to scoop it up and onto your bread. Keeps it juicy until you store it. Also, we use a slow cooker, which requires a heck of a lot less basting - if you want a short cut for next time.

I was just wishing for a cooking video! This brightened my day. My favorite way to eat pulled pork is on sliders made with the pork on a Hawaiian roll, topped with grilled pineapple, and a tropical style slaw. I think next you should make several versions of potato salad, by asking viewers for their family recipes because there are so many different ways people make it. Or an idea for something sweet you could make banana bread.

Andre, your hard work really paid off. You nailed the pulled pork recipe. The more you make it, the easier it will become. When you eventually get a proper smoker, you will have even more fun with the flavors. Talk to the Mr. H and Friends folks. They were able to get a couple of American style smokers from a dealer in the UK. They also spent some time learning about American BBQ from some famous pit masters and chefs including Kent Rollins while traveling in the USA. You might want to do some collaboration videos with them on American BBQ.

WOW! You went the whole mile. I love having a smoker and learned why people will put so much time and love to try and do an animal some justice for feeding us (before I finally quit all animal products). I also spent my younger years near our Gulf of Mexico coast, west of the Mississippi River eating some wonderful grandmother-cooked versions of some of your favorites (and some incredible Texas barbecue). Hickory smoke and wonderful brown sugar (in your case a bit of molasses and caster or white or raw sugar would work with chopped ginger, onions, spiced with some cracked peppercorns & star anise; stuff with quartered oranges and coat with olive oil and a little toasted sesame seed oil) brine made the best by far (small) turkeys (for Thanksgiving) I've ever eaten. Yeah, smoking meat changes the brain. LOL Great job, fun video! Now I'll have to pick up a can of jackfruit and some smoky Texas type barbecue sauce and vegan brioche or the like. Just kidding! That was impressive!

Watching your cooking videos always make me hungry and leave me wanting whatever you just made. And your pulled pork recipe was completely on point, right down to the Hellman's mayo (whether intentional or not, you chose THE best mayo brand). If I could offer a few suggestions for next time... (1) For a slightly different flavor profile, you can substitute the beer for a can of cola, dr pepper, or root beer. (2) You could reduce the meat jus and mix some of it back into your meat. (3) You could mix a splash of lemon juice and/or meat jus to your bbq sauce for even more flavor. (4) You could add some julienned apple and poppy seeds to your coleslaw. Even without these suggestions, you did an amazing job. Keep it up!

Green Apple in that slaw will make a huge world of difference. It compliments the pork really well and the tart and crisp goes very well with the texture. Personally, I would put some Diced jalapeños in there as well, but I enjoy heat.
