No one is questioning the hard work, but his hand has lacerations and dirt. Which will not only make the customer sick, but he can develop infection/septicemia too. Being poor doesn't mean one has to be unhygienic. It's a mentality not an issue of money. You can go to villages and people not only keep themselves clean but their surroundings too.

CHAT MASALA,GREEN CHILLI PASTE,MUSTARD SAUCE(MUSTARD KASUNDI),SUGAR,BLACK SALT,LEMON,CORIANDER,Brown sauce(this made of peanuts,plam sugar,chilly,star fruit by adding some water and mashing to get consistency that brown sauce shown in the video 4:32). RAW MANOGOES ARE MUST AND SHOULD😋😋 Add 1 spoon- sugar, chat masala, Half tea spoon of green chilly paste pinch of half tea spoon of black salt,Brown sauce Some mustard sauce Half lemon sprinkled AND MIX IT WELL.

Agree with not using newspaper, maybe something like banana leaf would be great. But plastic gloves are much more detrimental to health and environment than newspaper. Clean washed hands are more than enough to prepare food in a hygienic way... Bare hands does not mean unclean or unhygienic..... Gloves are just the western idea of cleanliness.. nothing clean or real about it..?.
