In hospitality school it was a serious no-no cutting food in the air above the cutting board. However, I think they would be highly impressed with these skills. Muscle memory is a great thing.

One thingvthat stands out with me is the fact that the hand touching the food has a food handling glove for sanitation. Go to any food stand at the fair or farmers market and see if those handlers are as clean. Great job. Excellent knife skills.

First job out of high school was working in the Produce dept of a major grocery chain and I was the best at prepping the various stations, even won an award. Had a guy name Sean that had serious award-winning knife skills and could carve anything. This guy would definitely run circles around us both 🙂

The best country at asian...Thailand is good example to give their citizen to make money on what they want to make bussines as long they not broken the law...like this small vendor they open the small stall at near by his own house ...if i do like this in my country confirm my stall stall in hours already in goverment servent lorry....in my country are illegal if i open stall like this so thats why i sqid Thailand goverment are good for lets their people doing for make money ...make people happy for living life...🎉🎉

Papaya, watermelon, cantalope, apple, coconut, pineapple, mango (many varieties including pickled), the small red one is a type of plums (quite sour), santol, guava (fresh and pickled), water olives (small green which he put chilli salt in), Chinese pear. Hope I got them all 😅

It is normal ice. You can order all sorts of ice from ice factory and they deliver in bags. Many street venders use the same ice for coffee, soft drinks and even meat/fish shops. Many coffee shops use round shape with a hole. The ice factory deliver daily (mostly very early morning) or as requested.

In the early '50, i've seen a fruit seller (in my home town Ipoh Perak🇲🇾) peel apple/pear🍎🍐 using 2 knives🗡🗡. 1st knife to do balancing, 2nd knife do peeling. People buy his fruits just to watch his skill. Other fruits🍉🍍🍈🍊🥭 he peel like in this video (super fast).👍👍👍👍👍
