While I would have loved to see the sun actually setting in the MK8D version, I think Nintendo tried to be realistic with the sun not setting so fast, since it's the realistic graphics we are dealing with.

@@AndyCat90 Not to mention that when the sun does set like in all the other versions of the track named "Sunset Wilds", the name would no longer be fitting. It'd become "Night Wilds".
