Idk, for easy patterns, background colour is the base colour and pattern could be a footprint of secondary colour, and for eggs that you don't know the pokémon inside (togepi, riolu, eevee) could be the standard spots

The only eggs I hatch are the Eevee eggs. I did hatch Togepi, some random pokemon from Crystal (I don't remember the pokemon), Wynaut, and Riolu, but those don't count since they're part of the story in the game. Also, don't ask how long it took for me to hatch a bunch of Eevee eggs to get three females and three males in gen 4 and 5 and four females and four males in gen 3 remake, 6, and 7. I do like the gen 7 animation the most because it pulls out the greatest detail in hatching.

The USUM version is actually when you’re hatching an Alolan variant, such as that Vulpix, or Sandshrew, Meowth, etc., so you see it in the original Sun/Moon too. I think they added that difference as a warning in case you wanted to hatch it in its standard forme? 🤔
