Or just use the subtotal tool maybe? This way you can remove them after you're done and you can use filters and sorts

I thought the same too. The Subtotal tool has many advantages including that it's not destructive to a contiguous data set and it can be applied and removed without damaging the data. However, for the example in this video, it would require repetitive values in the first column which don't exist. So, as an alternative to the Subtotal feature, it's an interesting option and as always demonstrates other handy shortcuts.
