On our 895, we are more concerned with picking up sand with the outboard's water intake than paint on the skeg. The abrasion of the impeller with sandy water really shortens the service life. Worth mentioning for viewers to walk the boat to deeper waters before starting the outboards. Your setup is typical, but it is worth mentioning the Garmin has a depth offset, so your readings are the actual depth and not water below the transducer. If you feel better having the margin of safety, consider bumping the offset in the opposite direction to include the outboards in the fully trimmed-up or down position so your reading is "water below the skeg" instead of "water under the transducer".

Does the Yamaha engine controller limit how high you raise your engines with the bench seat all the way back (asks a guys who cracked his engine cowling 3 days into owning a Merry Fisher)?

No, it will crash into the seat if you don't watch it!!!

I would be interested in water intake for generator. What would be too shallow for that?

Unfortunately we don't have a genset :( But yes that is something to watch out for for the engine impellors as well if you start the engines.
