SOUTH KOREA - We’re continuing with our Korean food road trip and today we’re fist eating some of the crispiest Korean fried chicken, then we’ll try legendary hay barbecue, and finish with spicy monkfish - probably my new favorite food in all of Korea!
Yangdong Market - We’re beginning in Gwangju at Yandong Market and straight to Yangdong Tongdak (양동통닭), one of the famous destinations for Korean fried chicken - a sensation around the world. They are known for their extra crispy fried chicken. But how do they do it?
Price: 21,000 KRW ($15.72 USD) per chicken
Duam Sikdang (두암식당) - Next stop we’re heading to Mongtan, South Korea, where they are known for their original hay smoked bbq. Thin slices of pork belly are ignited over burning hay.
Price: 16,000 KRW ($11.98 USD) per tray
Naegohyang Agujjim (내고향아구찜) - Finally we drove to the city of Masan, South Korea where they invented agujjim, steamed monkfish made into a spicy stew with bean sprouts. It was probably the spiciest Korean food I’ve ever had, and one of my new favorites of all Korean foods! Price: 45,000 KRW ($33.69 USD) per dish

주변에 한국인 친구에게 이 영상에 나온 음식들을 물어본다면 “너가 이 음식을 어떻게 알아?” 라고 친구가 말할것 입니다. 저는 한국 사람인데, 한국관광공사가 음식점 추천을 했겠지만, 메뉴 선택들이 100점 만점에 200점을 줘도 될 만큼 다양하고 색다른 메뉴들이라서 너무 좋습니다. If ask a Korean friend around you about the food in this video, he will say, "How do you know this food?" I'm a Korean, and the Korea Tourism Organization recommended a restaurant, but I'm so happy that the menu choices are so diverse and unique that I can give 200 points out of 100.

😮한국 관광청과 콜라보 였군요 아주 좋아요 마산은 옛날부터 아구찜이 유명해요 물고기가 너무 못생겨서 악마의 물고기란 별명이 있었습니다 어부들이 이 고기가 그물에 건져 올라오면 바로 꺼내어 바다에 다시 던져 버렸다고 해요 그러나 언재부터 먹기 시작 했다는데 고기의 육질이 아주 부드럽고 연하고 요리법에 따라 정말 맛이 있습니다 찜, 튀김,찌게 등 다양한 방법으로 먹고 성인병에 좋술안주 로도 아주 인기가 많습니다 아삭한 식감의 콩나물과 정말 잘 어울리지요 아귀 요리에 콩나물이 많은 이유는 콩나물에 숙취해소 성분이 많이 들어 있어서 술안주 요리에 아주 효과적 이기 때문 입니다 진정한 미식 여행 이군요 요즘은 아귀가 너무 비싸서 사먹기가 방설여 지는 음식이 되었습니다

I lost my appetite after being placed on meds for my auto immune disorder. I am a cook and this happening made me kind of depressed as I lost my love for everything food. So I watch you eat while I eat : You help with my appetite , and I love that. We eat together once a day , so thankyou Mark! ❤

I think the hay is used to add some flavor scents, but primarily to create ultra high temperatures which then renders the fat very well for a distinct texture. They use "hay burn," in Korea, for hagfish as well.

I am in awe. Korean food is so magical. I am sure that hay was rice hay. There are many kinds of grass that have a kind of sweetness. Rice hay I'm sure gives that meat a fragrance you can't get from any other means. All grasses have sugar in their chemical composition. To be sure, rice hay has a high sugar content. The pork then would become 'bacon' like quality.

I was introduced to monkfish as the poor mans lobster. I interned at Citrus and one day had to painstakingly remove all of the veins from whole fillets of monkfish for presentation.

Monkfish or baudroie or lotte in French is a very prestigious fish in Europe. The texture is not flaky like in fish but firm like in frog meat.

Here in the UK, Monkfish used to be a bycatch, and thrown back in, until someone decided to try cooking it and realised that the tail meat especially, was very good, and unlike many other white fish, it holds together and so can be cooked differently, like in stews or broths, without falling apart. Monkfish is now about twice the price of salmon.

@@NAZIRITE are most cod in Korea imported or caught off shore? Cod attracts a decent price here too, Salmon is about 50% more than Cod, and Monkfish is 30-50% more than Salmon.

FYI miso and doenjang (Korean soybean paste) are both fermented soybean pastes, but they different in processing. Doenjang is richer tasting and heartier - it can withstand stews. Miso is very delicate and can only be added to the soup at the last stage or you will kill its probiotic qualities. Personally I prefer doenjang for its versatility. Pailin (Hot Thai Kitchen) said that Thai soybean paste is closer to doenjang than miso. Mark I don't want this series to ever end!
