Extraction Of Date Palm Juice - Kheer/Payesh Cooking Using Fresh Palm Juice - Tasty Village Food

How to get fresh tasty juice from date palm tree in Bengali Village? We have captured full process of how to cut date tree top part to get juice? And how to set up pottery pot with it to collect juice from the tree?
Here first grand pa process date palm tree to collect juice from it then set up pottery pot with it.
And then in the very morning he collect fresh juice from about 15+ date palm tree.
Palm juice is very healthy & tasty village drink item and in winter season everybody love to drink it in very morning.
We have collect about 50 liter fresh juice from tree.
Then my village ladies boiling it and prepared tasty payesh/kheer using the juice and serve to about 200 children & villagers.
This is unique & very rare village style kheer item. This full program arranged & funding by AroundMeBD channel only as their charity work to village kids & villagers. We love to cook different style food for village children & villagers as charity food program.

CharGhat area on Rajshahi district of Bangladesh is famous for making country style brown sugar, both from sugar cane as well as date palms. There is a market there, dedicated to just selling brown sugar. On main market days sellers spill out to the sides of the main roads. They sell brown sugar of every variety you can imagine. There they use sugar cane waste burning for heat source. The heat source and the large pan make it very tricky to not burn the juice. Some producers make their brown sugars with flavours, usually spices. I went to school in that area.

The juicing guy, called a gaachhi, does this for 2-3 months a year. Everyday, every other day, depending on the tree age size etc. Palms are shaved and pots are hung in the evening, collected in the mornings. Palms produce 1-2 kgs of juice. Bangladesh date palms don't produce much high quality fruit, more seed than meat/pulp, soil type and moisture cause this. These palms are not driven to produce much fruit. Date palms can be juiced for 15-20 years at least. Heard stories about Bangladeshi migrant workers giving middle eastern date farmers a demonstration of this method, the palms got affected negatively, some died, some wouldn't produce fruit. The brown sugar is a delicacy. Master craftsmen take the juice through the process of making solid sugar.
