A single mum with two children - a teen and a one year old; Both very expensive! Having recently quit my full-time teaching job to go it by myself, I really need to start budgeting.

My favorite low cost recipe (USA) is Lentils & Brown Rice. It can feed 4 for about $1.50 USD including carrots. Ingredients: 3 cups broth (chicken or vegetable), 3/4 cups green lentils, 1/2 brown rice, 1/2 yellow onion-chopped, 2 teaspoons Italian seasoning, 1teaspoon garlic powder, 1/2 teaspoon pepper; combine all ingredients in a 2 quart bowl and cover with lid; bake for 1 hour + 10 minutes in a 300 degree oven*. Can be eaten like this, but I like to add grated cheddar cheese (about 1 cup or 4 ounces) and cook for about 20 more mins until cheese is melted. I serve with cooked carrots, but you choose the vegetable to your taste and budget. I do not know the equivalents in metric, sorry. *this can also be cooked in a slow cooker/crockpot. American broth usually has plenty of salt and fat. The cheese adds fat. Salt to taste.

Only thing I found cheaper is the 120g salmon beside that nothing else is that I like.

One of my own favorites is canned tomatoes (or fresh) with garlic, onions, thyme and a can of chickpeas. Its great on pasta or with rice or potatoes..

Great video. I loved it when you showed the recipe. Years ago I trained to be a cordon bleu cook, well I nearly trained I was in an abusive relationship and he used to hit me in the head. It gave me lots of headaches so I had to stop the training. But I did learn to make chicken chasseur at college. I will have to make that for my family. Thanx for the idea xx I shop asda but only cos my son works there so I get a discount lol. Xx

I quite often do pasta with a tin of chopped tomatoes (sprinkle of dried oregano and basil) and call it pasta Italiano sauce, cheap and kids love it. Xx

Asda is so expensive now. And they put prices up every couple of days...I'd rather go to Aldi, or local veg and ethnic shops. Rice, beans, and veg curry. I like that kind of food and happy to extream budget to feed the kids.

Thanks so much for this Lindsey! I agree with you on prices. I think they’re just making numbers up half the time 🤦‍♀️ That being said, I did give Asda another go the other day and I did manage to get a budget shop in - new video out on Saturday. I was relatively surprised actually! 🫢

@lindsey Mcgarvey..Aldi fruit and veg goes rotten in 2 days. Way before best before date. Tesco keeps fresh for a long time

Thank you for the ideas. My only concern is that on some of the days, it’s under 1000 calories of food - which isn’t healthy for most adults.

Thanks! And definitely a good point. I’ll often use up some more of the bread for toast and jam of an evening. My thinking behind this menu is to give people to dip in and out of for ideas. Whilst it is extreme, sadly, some people may well be in this position - I’ve been there myself, without a clue to make the money work. Hopefully it’s given some people some ideas of where to start though x

true, but you need to be inventive about how you get the extra calories. For instance most peple aim for the nicest leanest bacon, they do have packs of cooking bacon which are very fatty,but when chopped and reduced down make very nice soup stock..just add onion,carrot,lentils,a bit of potato if you like, boil up and whizz with hand blender if you so desire. Not even really necessary to add any salt (you can to taste).That is enough to feed 2 peopl for 2 or 3 days with bread done somehow-either straight or crutons.

i should also add this is where some items on the menu should be fried. adding a little lard or veggie oil into the die bulks up the calorific intake. @ budget mum ... maybe sautee potatoes with the omlette?

Strange. I always found tesco dearer than asda :(. I shop more in asda than anywhere now. It's kind of annoying you need to shop around a bit. you do find some things cheaper elsewhere. But i always end back at asda lol

I always figured it would be the case too. Maybe it depends on what you’re buying. I might look into store staples and compare them and see if that shows anything up. Definitely trickier though at the moment with everything seeming to change on an almost daily basis 😅

Our Tesco’s in Padstow is horrendously expensive. We do a Morrisons (gluten/lactose free stuff) and Lidl’s. Both are cheaper than Tesco’s

Oh gosh! Wow! There isn’t a Morrisons near me any more sadly - they all Closed down. There are a couple of lidls, including a new one just opened. I’ve yet to try (just get stuck in my ways 😅) but I’m sure I could give one a go for a video

I do occasionally try Aldi but I find their meat cuts not a great quality and the fruit and veg don’t last too long. For me, anyway. But do occasionally nip in if I need something and I’m passing by. I’ll be grabbing eggs from there today 😊

What little extras did you use from your stock cupboard to make the recipes please. I counted olive oil and basil for the pasta and stock cubes for the chicken chasseur....

Hi, thanks so Much. I used tinned tomatoes for the pasta dish rather than fresh and the basil I already had in as a herb so didn’t need to buy any more. It’s an option I think so could take or leave it if people wanted ☺️

These sort of videos are dead useful,especially now with food and energy bills going up so much. I wouldn't disagree with most of your shopping, but I would certainly not be shopping at asda or tesco as first choice if on an extreme budget. Aldi or Lidl around 6PM is when to get the best deals.The "best before today" items get 1/3 off around lunchtime to clear them, but remaining stock after 4PM or so gets the really massive markdowns. ie loaf of farmhouse seed-in bread for 20p. the "waste not want not" vegetable packs for £1.50 for nearly 2kg of veg(I've had 1kg bags of carrots for 9p) As an avid yellow sticker shopper myself I know sometimes you can't be too choosy with your menus,but it is possible to get some very good deals. Sadly staples are still required. eggs, rice,dried pulses/peas, milk, (little trick here is aldi+lidl do 1ltr of longlife for 55p...fresh is 85p),potatoes and porridge oats,and at least some fat and some protein needed.Atomic shrimp has some great ideas here if you are passing by a weatherspoons or burger king etc for the little portions of butter/mayo/ketchup/salt etc If whole chicken is being cleared I would take that and you have 3 good meals....one with good meat,one with trimmings and one with the carcase boiled up for stock etc.

Oh wow! What a fantastic comment! So many great idea and thoughts! You’re absolutely right! I mostly shop ‘yellow sticker’ or ‘whoopsies’ as I call them 🤣 I can see these videos have been helpful so I’ll definitely be doing more and going around other stores too. I also wanted to try and do a shop without yellow stickers to give everyone the same Opportunity of a shopping basket, if that makes sense ☺️

@@TheBudgetMumUK oh yes when grandkids were little if I bought Yorkshire puds they would say but we like your Yorkshire puds better so I made a point on a Sunday to make Yorkshire puds it didn't matter what meat we had it had to be Yorkshire puds as well
