He obviously takes great pride in his work; and seeing them recognize the flavors to taste like what they are supposed to tells him he did a job well done. The way he lit up whenever they got close to the answer also says he wanted them to find out; because if they couldn't figure it out he might think he failed to accurately portray the flavor. Another note; if he just wanted to watch them drink bad flavors, why would he sample them himself, if not to make sure they tasted as they should so that he would know the current contestant had a fair chance?
