What a treat! My daughter has a friend whose cow gave birth yesterday. She is bringing me a few quarts of colostrum. I'm thrilled!! The last time I had Kalvdans was in the early 60s when I was a kid. Thank you for your video. I'm now subscribed and look forward to exploring more recipes in my copies of the Great Scandinavian Cook Book and Hemmets Kokbok.

Good to see how our old traditional food are similar all across globe a similar recipe from India called Kharvas only difference we use jaggery instead of sugar and use steamer instead of oven :)

In my opinion they are both a little to grainy. I struggled with this a bit too. Ultimately, I think the temperature was too high in my case. My aunt told me to experiment with an egg yolk and maybe a spoon of flour. It helped, but I now just add a yolk to the cold milk. Since I've lost my source of råmjölk it might take a while until next time, but since then I have done a lot of Korean cooking - in particular a steamed egg dish called Gyeran-jjim. It has taught me that occasionally stirring the curd helps reducing bubbles. So maybe next time I'll try that a little because I really crave the flarn like, super smooth, consistence.

How do you know when to use a water bath in the oven or not?

Good question! I asked an "old-timer" and he said that that deepens on what fat level the milk is on. He ads a milk if it "feels" low. But i think it's try and error the first time, i'm afraid. Thanks for watching!

You might be right about overcooking it, but maybe tempering the egg before you added it to the hot mixture could have helped. Otherwise good video!

Jag åt kalvdans för några år sedan!! Väldigt märkligt so to say. Kändes också ganska fel att äta kalvens första mjölk. Men minns inte om jag gillade det eller inte men tror inte hehe. Min pappa pratade om att han jämt åt det som liten eftersom de hade kor när han var liten.

Kul! Ja men kan instämma där, doc är ju alla mejeriprodukter "barnets" mjölk. Kan nog instämma med dig, gjorde inget stort intryck på mig heller. Mer än att det var gott, men slår nog inte en créme brule, imo. Coolt att de hade kor! 🙂👨🌾
