佛手瓜，又名隼人瓜、安南瓜、寿瓜，合掌瓜等，清脆多汁，味美可口，营养价值较高，既可做菜，又能当水果生吃。其中蛋白质和钙的含量比黄瓜还多，维生素和矿物质含量也显著高于其他瓜类，并且热量很低，又是低钠食品，是心脏病、高血压病患者的保健蔬菜。
佛手瓜为多年生攀援性宿根草本植物，它的幼嫩卷须，因其须长而卷，就取名叫龙须菜，富含维生素C、高钾，有很高的营养价值，用开水氽烫后可凉拌、炒食或腌制，清脆爽口，风味独特。整个生育期无须喷药，不施用化肥，不使用生长调节剂，不存在农药、化肥残留问题，是无污染保健蔬菜。
