I think the rings don't have collision if you touch them, only the parts that are on the track do

I'm not super familiar with the tricks to this game, but what's the reason for letting go of the accelerator?

Acceleration in this game works by pushing your machine towards its top speed. This is also true when you're above the top speed, so letting go of the accelerator will actually decrease the rate at which you lose speed
