We’re from Sicily, we never put onions in the chop meat, I do do the thing with the milk and the day old bread, but I fry them just to brown the outside of them & then they go in the gravy. I might try the ricotta though, and will also try the Basil 🌿 I use a good amount of parsley, otherwise I use the same ingredients your using.

@@judiroth7855 hi, that's ricotta cheese. I use about 1/4 if a cup of ricotta cheese to 1 lb of ground beef. Use hamburger with about 80 percent meat 20 percent fat... 80/20. Its makes the meat so tender with ricotta cheese. You'll never go back. You can use a little less than a 1/4 of a cup if you want. Trust me you'll love it. If you have any other questions. You can ask me I'll try to help. Bread crumbs about the same 1/4 cup per pound... after you put in your eggs mix. You don't want your meatballs to be to sticky. If they are then you need a little more. Best meatballs I ever made and I'm Italian too.💖

Hi Fabio. Yours look really enticing, seriously. I was hoping you would cut one open so I could see the inside. Anyway, did you turn them after placing them in the pan and covering? I do mine in the oven. I used to soak my bread crumbs but I found too, that the moisture seeps out and THAT I didn't want. there are so many great meatball recipes on line but however, I'm not used to cooking. Had to learn on my own and through research on line. Thank you for posting. I'm gonna try your way. I used to just put mine in my sauce they DID come out lovely. Just lost my groove I guess!

i served these to guests yesterday and wow, that was some damn delicious dinner, everyone was amazed. such a rich meat flavor and in comparison to other (swedish) meatball recipes i have tried before i think the ricotta really, REALLY helps keep a fantastic texture and moisture. just 10/10. thank you for all your recipes, really like this channel!

I'm making this tonight,so I'll let you know what I think. I think the other key to a soft meat ball is cooking it in the marana sauce. I cook mine that way and it's so tender. First time for ricotta. But sounds belissima. ❤ Love watching you cook.

This is the way we made meatballs in South Philly in the old days. No little ugly commercial looking dry hard meatballs. Each adult got one meatball; the little kids had to share.

You can add some extra dimension with some chopped up prosciutto. Also, I like the taste of the meatball being at least browned before adding to the sauce.

This recipe is on Fabio's web site, but in that version, it just says to add a little water to the sauce, cook the meatballs in it for about 10 minutes on one side (I did 12), then flip them over and cook another 10 minutes, basting them with sauce while they cook. It didn't mention covering them. They get a nice sear on the bottom from sitting in the pan cooking in sauce, and they do stay very moist and tender, even if you cook them longer than the recipe says. I used his original version because I hadn't seen this video, and they turned out great. This was my first attempt ever at meatballs, and they were a hit with everyone who tried them! I also made Fabio's tomato sauce with garlic and oil and loved it, too.

I made these and mine turned out rather mealy, and crumbly. They didn’t have that smooth texture I’m normally used to. I’m not sure if anyone else had these happen, but mine just didn’t turn out well.

I use a lower fat hamburger...around 90% and they still come out plenty moist and are less difficult on the stomach and don't release so much fat into the sauce. I never fry or bake meatballs anymore since I saw a restaurant on Diners Drive Ins and Dives that just plopped them in the sauce. A lot less mess. You can do these in a larger sauce pan and cover the meatballs with sauce of course instead of using a fry pan. Doesn't hurt to gently mix and stir once halfway through the cook time.

Best gluten free meatballs use 365 ( Whole Foods) gf bread! Frozen section . Thaw and use only soft bread no crusts
