You could try it on the headliner, the seats and the fabric exterior roof (convertible) to gain a greater understanding of it's strengths and where it performs well. The different materials may yield different longevity, and it would be interesting to see how far it can be pushed. An exterior convertible top would be something customers may want to prevent staining and bird droppings etc.

Quick question just got my first car it’s a 06 Altima going to try my best to keep it super clean and restore it. Can I apply this so the seats vinyl and plastics . Just wanna make sure thanks in advance

No. I would look into delux for the plastic as for the vinyl I would do some test areas with leather coating and see how it responds. Fabric coating is mostly for carpet and non leather or vinyl seats
