Fairy cakes and banana bread

Banana bread
Ingredients
140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
Method
STEP 1
Heat oven to 180C/160C fan/gas 4.
STEP 2
Butter a 2lb loaf tin and line the base and sides with baking parchment.
STEP 3
Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
STEP 4
Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
STEP 5
Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals from around 30-40 mins in the oven by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
STEP 6
Cool in the tin for 10 mins, then remove to a wire rack.

I have made banana bread loads in the past, as you say it's so easy, in the super market they charge an arm and a leg for it, low cost ingredients =maximum profit. a decent tasty loaf, which , when cold and sliced is great toasted , spread with butter or Nuttella. I have not tried it but apparently it's crazy yummy to add choc chips in the mixture before it goes in the oven. Nice one Sue, might do banana loaf again. it/s been a while

Hi Sue, I’m a bit behind on videos life is busy, busy at the moment! Well done on the cakes especially when you’re not feeling your best, hope you’re better today. I like to cook but I’m not a baker! I’m multitasking in the kitchen at the moment doing smoked haddock for dinner, making my lunch for tomorrow and prepping a chicken meal in the slow cooker to put on in the morning for tomorrow nights dinner. Then I’m popping out later to see my nephew as it’s his birthday tomorrow! 🎉 I’ll try to keep up this week with videos, there’s just not enough hours in the day at the moment..😂 3 weeks and counting until holidays! 👏🤪
