Real paneer is always 100 % white Soft and can damage or break or split easily while soft touch.. But fake paneer is hard like rubber.. It doesn't get swallow even after cooking.. And it's not as white as milk.. Fake paneer is hard to break.. But soft paneer breaks while you put inside a small roti piece while eating.

Local dairy shops keep the paneer in water which makes it soft and fake paneer can also be very soft, i have tasted very soft fake paneer at a stall near my house, but i knew it was fake because of how cheap it was.
