I'm out for a cull day as part of a Fallow, Red and Muntjac Deer management plan on an estate in the South East of England, this was handled and organised by Steve from ‪@southayrshirestalking‬ and having just completed my DSC1 earlier in the year it was a great opportunity to put my hard work into practice & fill the freezer at the same time.
I take you through the day from my perspective in the high seat with Steve, the work back to at the larder and beyond into my home where I skin, butcher and package all of the meat before hanging the hide, ready for the next stage tanning which will be my next video.

This couldn't arrive in better timing im sat here with my son learning about deer hunting from feild to pan soo glad you add this side to your life to the channel and the detail you go to its been great to listen and see the journey through your license and into the different seasons mate 🦌🥾🤘

So awesome to see the process from start to finish! Insanely jealous of that hide as well, looks a beauty! Why do you put grass in it's mouth after the kill? Does that help preserve or is it a more spiritual meaning perhaps? Keep doing what your doing mate!

Thanks Owby! I'm so glad that you enjoyed seeing it all, it's a skill I've been so interested in sharing and it's good to see it's being recieved well. The grass is Letzter Bissen or Last Bite - it's a spiritual/traditional way to pay respects to the prey we hunt. It's actually a Germanic tradition but something I feel is extremely respectful.

Cool video, Liam jealous of the hide it's a beaut will be nice and warm on the cold camp outs. And all that good meat knowing exactly where it comes from will be nice whatever way you cook it

Good skills with the breakdown of venison and good prep work with silvers and top sides but a good boned and rolled leg or a just boned shoulder as a joint taste good to. But please get a good set of blades. The fillet and sliver or top taste so good when fresh as a whole join. What did you do with the saddle, or chops. Am also a butcher as a trade.

Yes they have to be managed to avoid significant crop damage and also habitat destruction/over crowding on the estate. Thanks for watching! :)

I've got a lot of beef kidney in my freezer, it's low cost protein here. I have tried other kidneys and don't half mind lamb. Of the off the shelf, how does the deer compare? Mild like lamb or stronger like beef?

Probably more akin to beef as its a stronger game flavour. It's been a while since I had kidney and am looking forward to trying these fallow ones 🙏
