We insulated where possible in the areas that had stud walls. We didn't insulate the double brick walls as it wasnt practical. Keep in mind it doesn't snow here. We are more concerned with keeping cool in summer so our houses are designed to be well ventilated with big eaves to keep the sun off our windows in the middle of the day.

Stumps? In the UK, we put a foundation strip in and build a dwarf wall. Basically 3 or 4 courses high but with big gaps between the bricks for airflow. The top course being normal with no gaps. Then theres no calculating to do, the floor joists rest on the dwarf walls. Just lay some damp proof course on the dwarf wall first before the joists. Also called sleeper walls.
