Ingredients:
Mandi Spices:
• Coriander Powder- 2 tbsp
• Cumin Powder- 1 tbsp
• Garam Masala- 1 tbsp
• Black Pepper- 1/2 tbsp
• Turmeric- 1 tsp
• Red Chili Powder- 1 tsp
Chicken Broth:
• 1 whole chicken, cut into half
• Olive oil or veg oil- 2 tbsp
• Salt- 2 tbsp
• Bay Leaf- 2
• Cinnamon- 1 stick
• Clove- 3
• Green cardamom- 3
• Black cardamom- 2
• Star Anise- 2
• Onion Diced- 1 mid
• Garlic- 3 bulbs
• Water- 3 cups
Chicken Roasting:
• Coating- (Broth- 1tbsp
Saffron- 1 pinch-optional
Mandi Spices- 1 tbsp
Olive Oil- 1tbsp)
• Roast chicken at 200 deg C & 20- 25 mins
Smoke Infusion:
• A small piece of charcoal
• 1 teaspoon vegetable oil
Rice Preparation:
• 2 cups basmati rice, rinsed and soaked for 30 minutes
• Chicken broth
• Olive oil or veg oil- 2 tbsp
• Salt- 2 tbsp
• Bay Leaf- 2
• Cinnamon- 1 stick
• Clove- 3
• Green cardamom- 3
• Black cardamom- 2
• Star Anise- 2
• Onion chopped- 1 mid
• Ginger Garlic Paste- 1 tbsp
• Mandi Spices- 1 tbsp
• Green Chili- 1
• Dry Lemon- 2
• Saffron (optional)
Yemeni Sauce:
• Tomato- 2 mid
• Green Chili- 1
• Garlic- 1 bulbs
• Salt to taste
• Coriander Leaves
• Lemon Juice (optional)
Garnish:
• Birista (fried onion)
• Almond & Cashew (roasted)
