Күн бұрын

The Last Word is a modern classic and bartenders favorite with roots in prohibition, what's not to love? Today I make a Last Word and spin out a variation on it on the fly.
The Last Word is a cocktail with countless variations, some of which you may not even know is a Last Word variation, for example the Paper Plane. It was invented at the Detroit Athletic Club during prohibition and was quite popular for a time. It faded into obscurity as the 20th century ground on though. In 2005 Murray Stenson, bartender at the Zig Zig Club in Seattle, was thumbing through a copy of Ted Saucier's Bottoms Up! (A cocktail guide from 1951) looking for something new / old to put on the menu. He shook up a Last Word and was hooked. The Drink traveled east to NYC in the hands of Audrey Saunders who put it on the menu at her Pegu Club in NYC (Great Bar, go there) and the drink was soon everywhere.
The coolest thing about the Last Word though is how well it works as a formula. You can easily swap out a couple of ingredients and wind up with a near perfect drink that's completely different from the original. Maybe dial in the ratios a touch and you're there. So in this one I made a Last Word and then spun out a variation on the fly, and tweaked that variation slightly. Don't have name for that drink yet, got any ideas?
Last Word
1 oz. or 30 ml. Lime Juice
1 oz. or 30 ml. Maraschino
1 oz. or 30 ml. Chartreuse
1 oz. or 30 ml. London Dry Gin
HTD Word #1
1 oz. or 30 ml. Lime Juice
1 oz. or 30 ml. Maraschino
1 oz. or 30 ml. Ancho Reyes Chile Liqueur
1 oz. or 30 ml. Mezcal
HTD Word #2
1 oz. or 30 ml. Lime Juice
1 oz. or 30 ml. Maraschino
.5 oz. or 15 ml. Ancho Reyes Chile Liqueur
.5 oz. or 15 ml. Chartreuse
1 oz. or 30 ml. Mezcal

The book references “here” because it was released as a publicity promotion for the Waldorf Astoria Hotel in NYC. I think that is what Ted means by “here” being NYC. I picked up a 1962 original full color version of this book last week at a library book sale for $2.00(!) and it is truly awesome in its full color version! Highly recommend. Edit: “here” could also refer to Detroit as it’s not clear if the notes came from Ted or from the cocktail authors.

Your mezcal variation is close to a Naked and Famous (Mezcal, lime juice, Yellow Chartreuse, and Aperol) which is one of my current favorites. Hey, I’ve got a cocktail recipe for you to try out on the show if you’d care to, or just to try out at home. I haven’t found this exact recipe anywhere else, and I personally love it. I call it a Henry's Old Fashioned: - 2oz Jameson (don’t substitute another whiskey or a bourbon, a rye, or a scotch, they drastically change the flavour). - 3/4-1oz St~Germaine elderflower liqueur (I’m not sure how well other elderflower liqueurs would work, though an ad hoc mix of bottlegreen’s elderflower water and vodka was alright). - 2-3 healthy dashes of Angostura gentian bitters (other bitters are alright in it, this is just what I built the drink with originally and my preference). - shake vigorously with ice. - strain or double strain into an empty (optionally chilled) short glass (like a rocks glass, an old fashioned glass, or a whiskey glass). - garnish with a twist of lime or a lime wedge (definitely preferable to go for the twist here, but it is fine to use a wedge if that’s what’s on hand). It’s built like a martini in terms of percentages and ratios, but the sweetness of the liqueur and the bitters, with the whiskey flavour, make it taste vaguely like an Old Fashioned. The sherry notes of the Jameson and the elderflower flavour of the St~Germaine give it a unique taste all its own though, it’s a very alcoholic tasting drink in the way that a martini is, but it’s also got enough sweetness and heat that the alcohol doesn’t make you feel like your just sipping liquor neat (which I do, personally, rather enjoy sometimes). And, at the suggestion of the first bartender I ever subjected to my idea for this cocktail, it is named after myself as it’s inventor: the Henry's Old Fashioned. Feel free to make this, anyone reading this, just please don’t take the recipe and change the name unless you’ve already been making this exact drink and calling it something else for over a year, thank you.

A mezcal last word does exist!!! And to be honest, I only substitute the gin for mezcal and keep everything else the same. It's really good. Another substitution for gin I regularly do is a Peat's word (seen in John Brown Underground in Lawrence Kansas by the wonderful Cammie). Use peated scotch (JBUG used Compass Box Peat Monster and so do I)

Ultima Palabra would have been a good name for the Mezcal variation . . if that didn't already exist as a different cocktail. Oh well. Love the Last Word, glad to see you finally tackle it.

I love this channel, never miss an episode and I always look forward to the next one. Greg, what we need now is for you to put together everything into a cocktail book. Include all the ways you can make your own syrups, different types of glasses used for different cocktails, outline all the different utensils you use or need to make a great cocktail, maybe even add a list of what every home bar should have as far as different spirits and other ingredients. I hope you have an amazing day, and I will wait for the book. All the best kid...

Just made one of these and man is it refreshing! Also found out you can replace the gin with an Irish Whisk(e)y which I need to try with my Redbreast 12.

I was rewatching your “one of everything” episode and you mentioned you could do a whole episode on tea, what if you did a dry week with episodes on tea and other nonalcoholic stuff?

Holy hell that Mezcal variant #2 is amazing! Well done with the smoky and spicy. I didn't think I'd find a variant I liked more than the Final Ward, but here we are.

Not sure if anyone’s called it out yet but Death and Co. had a variation in their first book using mezcal, aperol, lime, & yellow chartreuse. Quite delicious if I do say so.

I didn't had Chile liquor but I had jalapeno infused mescal, so I split regular mescal with jalapeno infused and also split maraschino with grapefruit liquor. And it went amazing, grapefruit tartness plays very well with rest of components! Give it a try!

There's a local Mexican restaurant near DC which does a Last Word variation called Last of the Oaxacans. It's just a Last Word, but swap the gin for mezcal. It's fantastic

I had a terrible old cocktail recently that I thought it might be interesting to see you improve. The tremblement de terre, associated to Henri de Toulouse-Lautrec, which is equal parts congac and absinthe stirred over ice.

Hey Greg, since you enjoy doing these older drinks, I was wondering if you have thought about doing some from Julian Anderson’s book Julian’s Recipes? It was written before Prohibition and his drinks were considered “better than the finest.” His book is one of the last releases before prohibition and only the second written by a Black bartender. The first was The Ideal Bartender by Tom Bullock.
