Catan is one of the original beginner games. I also recommend Azul, Carcassonne, Sagrada and The Quacks of Quedlinburg

Correct. I mean you can create a house rule if that’s too much for your group. But rules is rules.

Randomly determine the first player by punching each other in the face until someone gives up. A better rule does not exist.
