Cam and Nina (wrong thread oops) i usually slice them up to avoid too much slime then cook them with onion, garlic, fresh tomatoes and some spices. it works great in fried rice too!

I never know what to do with beetroot...

You can add a couple of chunks into your smoothie for an extra punch, makes it the most beautiful colour as well! Just beware it has a strong taste so a little goes a long way. Spiralize it and have it raw with salads, or my favourite with quinoa and chickpeas. You can also roast it with potatoes and sweet potatoes to have as a side dish. You can make hummus with it! Roast it and add in with chickpeas and all the usual hummus ingredients. If you like rosemary put that it, it goes really nicely. Oh the possibilities! :))
