I do wish you talked more about what each ingredient did and how it produces each type of cheese (I love to know the science behind it all).

I made this and it is delicious. Going to vacpac half and wait another few months or more to try it again. I also made the buttermilk blue and it was very good. Made blue cheese salad dressing with that. These blue cheeses have been my favorite homemade cheeses. I use raw milk and am wondering if that brings a more fermented/earthy taste than cheeses made with pasteurized milk? I find my homemade cheeses are quite different than store-bought (but still delicious). Any thoughts? Thanks so much!

When you made this one you talked of waxing or vacuum sealing this at one month. Did you not do that and why? I'm thinking of making this next. My cheddar from your vid is looking absolutely perfect at 2 months, going to go at least 6 and maybe a year if I can stand it. But my Stilton, as we've discussed, smells and looks like hell. I was hoping that maybe if I do the combo like this I can have delicious blue cheese that doesn't smell like a rotting corpse in my "cave". Thoughts? Love the channel Gav. Love it!

Gavin, I made this recipe, and it's fantastic! Just tried it after a 3 month maturation. My question is, how do I store it now that I've cut it into quarters? I'm tempted to vac-pack a couple quarters and try a few more months of aging?? Say a 3 month quarter and a 6 month quarter? A year? Would it hold up or benefit for a longer go?? Thank you sir!

pasteurizing kills all the bacteria but also damages much of the flavor. Raw milk is the best milk for making cheese.

I finally found a place I could get raw milk from and now I need to figure out what to make first. Lyles not sure if you make cheese but of you do what would be your first choice with raw milk?

Time for illumination WOW, looks like I hit a sore spot somehow, if I offended someone I am truly sorry but my aim was just to have a little fun asking a simple question cause I was so excited to be able to find raw milk. I didn't watch or listen to literally tens of hours of what he said about cheese but I know he is my go to for information on cheese and I really enjoy his shows. The first two reply only warned me about killing the bacteria or telling me make whatever you want it will be good. Time for illumination thank you for the enlightenment of Gavins thoughts and letting me know he gets a lot of headaches I will no longer trouble him with my silliness. Also thank you very much on the info on how the season effects cows milk that I didn't know and will jot that down in my notes.

I was under the assumption no mold was good to eat. With cheese you’re able to eat the mold as long as it hasn’t gone past the rind or what’s the rule with mold on cheese

Lyles 🐢 Hi Lyles, check out realmilk.com they have a list of farms in different states that is willing to sell raw milk. I was able to find one near me. Good luck.

Raw milk is not required. Whole milk works fine, you just need to add a culture.

Not always. Sometimes they have a disgusting ammonia flavor. I once made the mistake of ruining a $20 wedge of cheese by grating the rind with it and the whole thing tasted like straight up litter box. It wasn’t even a matter of taste.. just inedible.
