Ingredients
550g / 19½oz Strong white bread flour
385g / 13½oz Cold water
1½tsp / 5g instant or active dried yeast / if using fresh yeast 15g / ½oz
1½tbl / 20g vegetable oil
1tsp Table salt or 1½ Kosher salt
Seeds for top of bread, I’m using 1tbl of sesame seeds (optional)

Dear John: I have made several of breads and thanks for your videos. Year's ago I had bake shop in culinary school. Yours are better! I made six loaves of the farmhouse loaf for Communion Sunday and they loved it! Thanks again!

I’ve been trying to make bread with that lovely open crumb for months now , I tried 100’s of recipes online , techniques etc , none of them produced a really decent open crumb loaf. I followed the instructions exactly in all of them ... no joy ... until finding this recipe from John , I bought a Dutch oven , great investment, and from the very first attempt it was perfect ! I now make this at least 3 times a week and don’t buy bread from the shops anymore. Perfect every time and so easy to do. I even bought a shower cap ! Thanks for the great tutorials John

You are a treasure of solid tips, and that is what makes the difference between an amateur and a professional. Everybody else states that the covered vessel needs a 30 minute preheat, you are the only guy who rightfully says a ceramic oven only needs about 10. I get mine at thrift stores and because they are orphans from the typical slow cooker that died they go for cheap, usually only $2- $3, plus they are somewhat lighter than their cast iron cousin, the only caveat is to replace any plastic knob with a store bought metal one, and if you're the ultimate in cheap like me you'll pull those off discarded cabinets found roadside. ☺

Some of the happiest memories of my childhood was sitting in the counter watching my grandmother make bread. I always wanted to be just like her when I grew up, and in many ways I am.....but I never got the bread making thing down. Try as I may, it would never rise properly. Then last night, after 39 years of marriage I tried this method. It was perfect! And my husband is picky too. He even liked it. Now I have the confidence to try other types. I put sesame seeds on the Dutch oven bread....by the way my grandmother was Dutch...must have had something to do with it. Thanks for the recipe. I am forever great full. Now let’s see if I can get my PayPal to work.

Please follow these 4 simple rules when making the breads on my channel . Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. I made this last night and it was amazing. I make the french baguettes all the time and they are easy and delicious. I was looking on youtube for a quick and easy bread to make last night and thought that I would search "John Kirkwood" as the baguettes never let me down. I was watching this video and my oldest son walked into the room and asked me if I was watching Winnie the Pooh. LOL. We used to watch that together years and years ago when he was a toddler. I told him that I was watching a bread making video by an amazing bread maker with the soothing voice of Winnie. I want to try the sourdough bread next but I haven't gotten around to making the starter. Keep the great videos coming. My husband told me that I should open a bakery and that's all thanks to these fantastic (and easy) bread recipes.

I cooked this today in a "Le Crueset" 23cm iron cocotte (like a dutch oven) with French wholemeal flour (12.4 Protein) with poppy seeds on top and it was a smashing success. Going to try the baguettes next.

I used a clay pot to bake this bread. Three times already. It was fantastic. I also baked your wholemeal baguettes with great success. I am new to baking bread at home. Your recipes are rolls royce John. Thank you for sharing.

Thanks again, John! Just made this and it came out picture perfect! I added a couple of tweaks and still everything was fine. I went 50/50 with rye and strong bread flour, made the poolish the night before (why not?) and did the four 45 minute rests like with your original baguette video, thinking that the rye might need more time to develop. Another great video John. This is a great way to make some really delicious well risen bread and doing it this way you don't have to worry about extra steam in the oven to aid 'oven spring' as it's all contained in the pot from the dough, fantastic. Cheers mate.

Hi John, I’ve made this a few times, success every time. Last night, tried an overnight rise, using just a quarter teaspoon of yeast. The dough was initially given five “folds” in the bowl, every twenty minutes. Then left covered for twelve hours. Then loosened with five “folds” and tipped into the wok for an hour. I cranked the temp up to 230C. Baked lid on for 30 mins, lid off for 10 mins. Best result yet. Again, thank you for the inspiration, I’d never have had the confidence without your videos. As usual a pleasant and easy to understand video. All explanations make sense and can be easily verified. I use a 50/50 combination of wheat and spelt flour in which I often mix 10 g of bread spice (caraway seeds, fennel, coriander). Everything else is as per your recipe. I have made this bread for the 1st time to serve it at Easter breakfast and it was very delicious! Since then I am making it every week, usually two loafs at the same time. The Dutch oven technique gives it a very special texture that I was never able to get using traditional bread baking method. Thank you, John, for this wonderful and easy to follow recipe! It becomes now a classic in my kitchen.

Thanks John for your great videos on bread making. I’m not a bread maker, though was once a bread winner. I thought of learning how to make bread, at the very least, with the spare time I’ve on hand. And so came across your excellent videos. Have seen the videos a number of times and noted all the important things I needed to know. Made it once and didn’t quite succeed. The bread came out dense even though I adhered strictly to all the measures and steps shown and the proofing and baking times as suggested by you. I’ve a kitchen counter top oven model which can’t be set to 190 degrees C, it is either 180 or 200 nothing in between. On tapping it didn’t quite sound like yours but more like tapping on a brick wall. Though I thought I could eat the bread but my beagle looked at the bread and then me and then at the wall, probably he meant to say “I prefer to eat the wall”. I’ll try again and see whether next time he will eat the bread or the wall.

If you followed the recipe exactly there should be no reason why your bread should be any different to mine, check each of the rules below and see if there's anything you can improve on. Oven temp: start off at 200 then reduce it to 180 after the bread has been in for 15 minutes that should account for that. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate and this will inevitably lead to dense heavy results. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. John. Your systematic explanation is awesome! I tried deviating from your steps and I got interesting results. Instead of using a wock, I let the dough grow in the cold cast iron Dutch oven. Then I put it back in the oven. The bread then grew very large after baking. Tasted real good.

Thank you, John, for the informational bit in the beginning on protein in bread making! Baking is a balancing act, type of science. I'm allergic to wheat, but refuse to give up carbs. Knowing that a good loaf bread made with wheat flour has at least 12g/12% protein, helps me a LOT because my bread flour mix is also gluten free, which adds a another layer of difficulty. I see, now, that I'm probably going to need at least 15% of high protein flour in my bread flour mix in order to pull off a GOOD loaf of wheat-free bread. THANKS!

Great video and a faster no Knead. I’ve been making a version of this loaf for years, Jim Lahey overnight method. I will try this, and like the final proof and transfer using the wok. I do agree sesame seeds are great. I would do one thing different. Final proof seam side down, bake seam side up for a natural fissure. It’s the way I do it if I don’t score doing smooth side down. Thank you for your nice explanation. I tried the overnight rise in the fridge. Unfortunately it consists way too much yeast for this as the dough rose soo high over night. I'll try again next time with much less yeast. Also I needed to add much more water to get the same consistency as you showed in the video. But ok, I'm aware that ingredients are different from country to country and I'll have to try until it works for me. But I really like the idea so thank you so much for the inspiration

I changed the flour to 300g wholewheat flour mixed with 200g plain flour as this was what i had in my kitchen. then follow your recipe and steps, the loaf comes out perfectly. OMG. I’m a pretty decent cook but I’ve never baked a thing in my life. I happened upon this video by accident. It looked easy enough so I thought I’d try it. I don’t have a scale so I didn’t measure as carefully as I should. I also left the first rise go overnight, about 12 hours. Thought I’d ruined it a couple of times, seemed dry to me but I carried on. I’m here to tell you it was AMAZING. Can’t wait to try a few variations - like buns.

I feel you've been a tad fortunate with the measurements AT, imagine what you could do with a cheap set of digital scales👍😉, keep watching and stay safe my friend.

John Kirkwood yessir. A kitchen scale has risen to the top of my list. BTW, the loaf is a bit small for my family. Could t be increased by, say, 50% for one loaf or is it better to just make two loaves?

Yes you can increase by 50% ATS, as long as your dutchy is big enough.

John Kirkwood thank you. I used my smallest, 6 qt. I actually thought it was too big for my first attempt and my loaf would be very flat. It worked out fine, the loaf didn’t even touch the sides. I’m sure I can go 50% bigger with no worries.

Your no Knead recipes have changed my bread making experience from un risen, flat, lifeless bread, into something better and tastier than I can buy in a super market, and now I live in the Philippines, it gives me a chance to make bread better than I had at home! Thank you! I love your recipes, and easy to follow videos, full of great tips. I just wondered if you have a recipe for Bagels you want to share? Thank you again!

Hi John! I love your videos. I make this recipe every week, the ciabatta recipe every other day, and both are AMAZING! I was wondering if you ever use a banneton for bread making because I was given one as a gift, but I'm not really sure where to start! Thank you again for your wonderful recipes :)

Just back from a camping and fishing trip, and somehow ended up with a sore wrist and a sore thumb on the other hand (too much home made dragon-fruit wine? too many mud crabs? nearing my use-by date?) Anyway, I recalled seeing something about no kneed bread on your channel. Then I spotted this one with the Dutch oven. I am to cast iron cookware what Emelda Marcos was to shoes. It's a cold morning here at 18 C, I just lit a big wood fire and I am feeling just a little bit thrilled at the prospects of attempting this recipe today. Thank you.

@@JohnKirkwoodProFoodHomemadeYes, John, it was a good trip. It is nice to have some seafood in the freezer. I always remember how difficult it was to get decent seafood in the Midlands. Basically it was battered cod, crumbed cod, or fish fingers (battered and crumbed cod). I also worked out why I thought your accent might be welsh; it turns out that you sound a lot like another youtuber I enjoy, only he's from County Durham. I thought he was from Wales. I was vaguely aware that County Durham was not in Wales so I checked on Google maps, and everything finally fell into place.
