To use more eggplant you might look for Greek Eggplant Moussaka Recipe. It has eggplant, potatoes, ground beef, along with a Bechamel Sauce. Very good and filling.

Mousakka is the best ! I like it with ground beef but I love it with ground lamb sometimes even a mix of the two. There is a Greek chef on here named Akis P …… something…..he is amazing and I trust any recipe he gives. Very traditional. My tzatziki is the best you’ve ever had because I follow his recipes which are traditional lol 😆

Great recipes to use up some milk is "milktart" and "melkkos". Both are South-African recipes and sweet recipes, but you can make it as healthy as you what by just cutting out on the sugar.

Our favorite eggplant recipe is baba ghanoush. Char a whole eggplant on the grill or gas stove like you would a bell pepper, and squeeze it out of the skin after it swears and cools. Immersion blend with tahini, olive oil, fresh garlic, lemon, and whatever herbs you have on hand. So good as a dip or sandwich spread!

You have mentioned pumpkin pie pumpkins in your last two videos, I actually have a tip: the best pumpkins to cook with are actually the really beautiful decorative ones such a Cinderella pumpkins. They have been bred with other squash varieties and have way denser, thick skin that cooks down amazingly and is super flavorful. After they have lived on the porch awhile for decor definitely cook with them. Also, pumpkin puree from the store is mostly butternut squash, not pumpkin 🤯

At Halloween/Easter/Valentine's/Christmas etc anytime where copious amounts of candy are around I let my children indulge for 3 days and on day 4 the remainder is tossed in the garbage. I never get any blowback, the children are satisfied and I feel good that I set a reasonable limit. Each family does what is best for them🌻

My rule with holiday/activity candy is that they have one full day to eat as much as they want and then it’s goes into the candy jar and periodically they get 15min of free for all with the jar 😂

I do not fry eggplant in eggplant parmesian. I peel it, slice it, season with salt, pepper, garlic & onion powder. Then add sauce, eggplant, sauce, cheese and repeat. Then I bake. It takes longer to bake. There is no breading, frying and it is delicious.

You always give such good tips on finding ways to use all food and store it properly, so that it does not get forgotten. We, too, get rid of old candy, broken things that cannot be repaired, and give away anything we simply no longer use for any purpose.

You could make ratatouille, which uses eggplant, peppers, onions, zucchini, tomatoes. It can be eaten hot over pasta or at room temperature as a side. You can make it spicy or not. Also uses olives. Fabulous with your sourdough bread.

We are a family that throws out candy from parades as well, especially now that we avoid numbered dyes due to my daughter having an allergy to them. Also, I love the coziness of your home in the warm night at night! Made me feel so calm. I can't wait for your sourdough cookbook! I am definitely impatiently waiting for it. For eggplant, try this recipe. It’s delicious, Russian dish. Saute chopped onions with some oil, garlic, carrots, peppers. Then add cubed eggplant (small cubes), don’t salt or season until the end as eggplant will become spongy. Let it sauté until cooked, add seasoning little bit of pasta sauce and simmer for 5 more mins. It’s so good on a toast, delicious cold too.

I had seven kids all grown now, but I did the same with our candies but some I saved good chocolate I would shave it down and use in cookies instead of chocolate chips. We also made ginger bread houses for Christmas which no one ever ate I would save some candy for that but everything else would not be missed so out it went.

Biscuits and gravey!!! OH MY LANTA!!!!!! Sour dough plus fresh farm milk. I'm envious. We do candy more than we should and I have gotten to where I now hide it too. Then I forget about it. Toys, I have 3 and I have a room full of toys that they don't play with. My oldest is a gamer so that's his toy. My 3 year old plays with his trainset and "buildies" which are big legos. My 1 year old plays with what the others play with haha. So I'm seriously considering doing a mass toy removal.

You can use eggplant for: eggplant casserole, fried eggplant, eggplant Parmesan. Just never eat it raw, because it can cause stomach problems and some people are highly sensitive to a chemical they have in them unless cooked.

I learned eggplant stacks in Rome and it's my favorite way to eat them. Cut them in slices bake them with salt pepper and olive oil. Then stack in repeating order an eggplant slice , tomato/ marinara sauce, and a slice of fresh mozzarella. Then throw them in the oven again long enough to melt the cheese.

Becky on Acre Homestead makes baked oatmeal with 12 eggs to use up her chicken eggs. We make it yet do not have chickens so I only use 4. You could make 3 of these and use up 36 eggs. I have been making pumpkin ones lately. If you allow you kids to Trick or Treat, make a deal they can only keep the quality chocolate. If you allow 1 month worth of desert only candy for the month of Oct. You can use some of it in cookies etc.

Late to the party, as I'm only now watching this interesting video. Wanted to say that with eggplant we always make baba ghanoush, a middle-eastern dip that everyone loves. Roast eggplant, mashed with garlic, tahini, and lemon juice, seasoned with salt and cumin. Delish!

For eggplants … You can slice and fry them and dip it soy sauce. Other times we do “torta” and it’s a delicious way of serving eggplants. Kinda hard to explain here, but you can look it up if you want to checkout other eggplant recipes 😊

The only way I like, eggplant and I’m Italian, is eggplant Parmesan. So you dip it in egg then breadcrumb then saute gently for just a few moments until it’s brown then layer it with your sauce and mozzarella and Romano or provolone cheese more sauce another layer, another layer until you have like a lasagna that you made out of eggplant. if you try to do it without sautéing it first it’s kind of disgusting. You need that little bit of crisp in there to make it taste good. You could, if you want to, bake it for just a few minutes until you brown it almost broiling it. Instead of frying it, that will save you all that oil and time. Put it on Sheets in the oven and then into your pan to layer to make a lasagna with it. Eggplant Parmesan. Delicious!

I throw out candy! We are pretty much empty nesters I still keep my pantry room full . We live on 50 acres with a small farm and huge garden, this morning we harvested the last of our tomatoes and cucumbers, the peppers are still growing , I will wait to pick more in a few days, our Brussel Sprouts almost ready. We only use our chickens for eggs , and we have ducks and turkeys, my husband isn't crazy about chicken I only cook it if I want it. We work outside the home ( yet we're both retired lol ) I absolutely love your videos ! You've given me such great ideas, we also live in a big farmhouse, I feel so blessed. I'm really trying not to waste so much, it's been hard learning to cook for 2 , we definitely eat leftovers, I need to start making smaller amounts of food.

I’m Italian. Make eggplant Parmesan just dip the slices of eggplant in the egg and milk mixture and then put breadcrumbs on them fried up and pan. You can have sandwiches with cheese on it. It’s delicious.

I agree on the candy. My kids are grown and gone, but when they were younger and would get candy at Halloween or an event, rather than space out the cany over several, I let them eat all the candy they wanted for two days, then it went onto the trash.

Here in the Deep South, pumpkins are only seasonal if you want them to be. We grow different varieties almost year round. Our kids favorite recipe is my Pumpkin Quinoa Fritters. I’ll be doing a video on those soon. We also make pumpkin bread, pumpkin pie pumpkin pancakes, pumpkin fettuccine etc. We did an entire day last year where the kids had a contest to make a pumpkin recipe for every meal that day.
