I really enjoyed this episode. I liked the focus on how French fries are a part of signature dishes around the world, each country adding its own cultural twist. Well done, and it would be nice to see more of these international comparisons of a particular culinary dish.

Aside from Lomo Saltado, Peru has "salchipapa", which is a mixture of French fries and sliced sausages. It's a quite popular street food/food to eat late at night, and apart from the usual dippings (ketchup, mayonnaise, etc), it can also be served with a fried egg, a slice of cheese or lunchmeat on top. There are other variations too (chorizo or chicken instead of sausages, etc.)

Never in my 48 years have I heard anyone here in the UK call chips “chippies”. A chippy is the name of a Fish & Chip shop/takeaway

I use leftover fries for breakfast next day. Just throw in some eggs, maybe a bit of chives and eat it with ketchup. Never been much of a ketchup person, but this combo is great.

​@@Smarfton I have done ketchup on eggs before but only on scrambled eggs. I didn't think it would be good but it's not bad. The acidic taste accentuates the eggs pretty well. Even better with a bit of cheese mixed in.

I use them in a breakfast burrito, with any leftover meats + bacon and eggs. And indeed ketchup, but mixed with some hot sauce.

A 'chippy' is where you get fish & chips. It's not a nickname for chips. Get them from a takeout and you will pretty much only get salt & vinegar on them. If you have them at a restaurant, then you'll get your choice of condiments. The best 'chippy' is in Aldeburgh in Suffolk, home of the composer Benjamin Britten and next to Snape where there's an annual music festival. Still best eaten on the beach - the ozone smell just makes it even better somehow. And if you want to eat chips without so much fat, big chips are better for you than those skinny floppy things. Less surface area for all of the sides that you get per potato (work it out with something like Jenga bricks if you don't get what I mean). Also the fat doesn't go so far into the big chips than the skinny fries where it can go through the entire thing 🤢. On top of all that, big chips keep their heat longer (again, surface area : volume ratio).

Here’s my favorite french fry recipe - thinly slice golden potatoes, throw into a cast iron skillet for frying with vegetable oil - sprinkle with Goya Sazon and let cook until crisp. The sazon crisps up and gives the fries a delicious, salty and savory flavor. Then add a sunny side egg to the plate along with either trader joes jalapeno sauce or a mix of sour cream and bbq sauce and alternate dips between egg yolks and sauce.

Except that this woman spat on the face of Chilean and other Incan Native Americans by claiming (at 0:39) that before the 16th century, potatoes weren’t even considered food. When in reality people from the Andes has been making dishes for thousand of years before the 16th century.

After all, history interpretations are subjective; besides I'm happy that my country is mentioned in these videos and she actually was right of the origins of the Chorrillana (though she butchered the pronunciation wich i also dont blame her)

In Australia, like England we are also a fish & chips nation. Down here if u buy hot chips which could be a lunch or dinner on their own, you'll find that a lot of us will put vinegar or tomato sauce & the fan favourite chicken salt which is yummy. We also will eat chips with gravy as a side dish whether it being paired with chicken or steak. The most iconic Aussie meal is the famous pub meal being chicken schnitty, chips & gravy.

As an American who has an Australian fiancee, I believe I know that what you call "tomato sauce" is what we call ketchup. What we call tomato sauce is just tomatoes pureed to a thin sauce with some salt, which we use to make spaghetti sauce.

If you go to northern Quebec, in the Lac-St-Jean region, you can ask for a frittes sauce, its HUGE and soooo yummy. Pourine is even better 😊

In San Diego, California, Mexican taco shops sell Carne Asada fries, which are fries topped with carne asada, sour cream (sometimes cheese an cilantro?). There’s also the California burrito which contains carne asada, fries, and some other ingredients. (Forgive my faulty memory as it’s been years since I travel that far south in California).

4:30 Disco Fries were created in New Jersey without knowing that poutine already existed in Québec. Therefore, it's wrong to say that Disco Fries are a version of poutine. You could say the other way around that poutine is a version of Disco Fries. There were created separately.

Actually, "french" fries doesn't refer to France. The term is really "frenched" fries, which refers to how the potato is cut. Frenched means long narrow cuts. Over the years, the word was shortened to "french" fries. I don't understand the concept of pouring melted cheese, gravy etc over french fries. You end up with wet, mushy fries, instead of a crisp fried delicacy. Makes no sense to me.

Poutine does come from the province of Quebec, but not Quebec City! Again there's a feud between two cities who claim the invention; Drummondville and Victoriaville, but eh, nobody knows for sure haha 😌 The legend tells of an anglophone trucker that wanted fries and gravy with cheese, but they asked where the toppings should go, and he asked them to "put it in", was shortened to "put in" in some unknown manner and then became "poutine"... PS - (The best one I've tasted was just outside Victoriaville)
