They died because they were killed. Cringe-worthy meme jokes aside I can give you an in-depth answer before but there will be spoilers about the bigger picture behind the Holy Grail War as a whole with information beyond just Unlimited Blade Works. 1. The entire point of the Holy Grail Ritual is to summon seven servants and sacrifice them to gather up the magical energy needed to fuel the Greater Fubuki Grail. 2. The Holy Grail War itself serves conveniently as both a way to dispatch the summoned Servants by pitting them against each other and as a method of figuring out which mage gets the opportunity to benefit from the end result of the ritual. The reason you are disqualified from the war if you don't have any command seals left is because one is supposed to be left at the end to force the winning master's Servant to commit suicide to finish the ritual. Servants are not told this in advance nor are 'filler' masters like Shirou who aren't part of any of the organizations that send participants. 3. A wish is indeed possible but it's only intended for the last master standing and originally designed as an attempt to reach 'The Root' that all mages strive to do. However, this always failed for one reason or another and during the Third Holy Grail War the Grail was corrupted when an Avenger named Antra Mainyu was illegally summoned for use in the War instead of the normal seven Servant classes since his magical energy contained all the evils of mankind on a conceptual level and this was infused into the Grail upon his death. Afterwards, any wish made on the Grail was cursed to be perverted in the worst possible way which is why Kiritsugu from Fate Zero ordered his Servant to destroy it after realizing its true nature but not before some of the primordial mud released from the Grail absolutely devastated the surrounding area with Shirou being the only survivor. 4. All of the characters who are servants are just copied spirit origins given temporary physical form with magic. The only exceptions to this are Saber whose situation is a bit unique since she's actually still a living person but also a Heroic Spirit at the same time due to a special deal she made with the world itself and Gilgamesh who was incarnated via Holy Grail at the end of the 4th Holy Grail War isn't a proper participant in the 5th Holy Grail War (he interferes anyway for his own reasons). 5. As for the human characters of the Holy Grail War, it was established early on that while it wasn't necessary for Masters to die in order to complete the ritual it was easier to them to eliminate their Servants instead of trying to defeat the Servant directly. Any Master left alive also has a chance to form another contract with a Heroic Spirit who lost their own Master and rejoin the War so any opponent spared may come back to bite you in the future. Most mages are highly practical and have a distinct lack of empathy so they don't let something like morals get in the way of securing an advantage in the War. There is an unspoken rule to avoid drawing attention to the mystics by involving normal people in the Holy Grail War which is why a temporary truce was called to eliminate the rogue serial killer and his Caster servant in the Forth Holy Grail War. However, Shinji's plan to milk the entire student body of his school dry of magical energy (killing everyone obviously) to super-charge Rider would have been attempted by most mages if they thought they could get away with it. At this point I'd like to point out that Rin Tohsaka, while a skilled mage with exceptional natural talent, is ironically much closer in temperament to a normal human like Shirou than she is to a typical mage of the time period since she finds such actions distasteful. She tries to hide being a good person (extremely rare quality for a mage) since that's considered a liability for any true mage such as her father whom she idolized. homunculusespeciallytotally lose her sense of self. Thus if the War progresses as intended then she's screwed no matter the outcome. Outside of Illya, there aren't any deaths of living beings that are necessary for the ritual so the rest mostly just happen as a result of brutal no-holds-barred competition between magic-users and their superhuman familiars.

@@kylepessell1350 And Heaven Feel Route all the deaths usually revolve around *everything* going horribly, horribly wrong, neglected, abused, and/or traumatized minors not being the most well adjusted individuals, and certain parties not really caring about their lives for various reasons including but not limited to being made that way, not having much life left to live anyhow, and my brain is turning into swords.
