Which of the story free units are worth building? What friend servant should I focus picking? I usually pick a berserker friend(Morgan) with aoe np because I picked Waver from the free ssr

if you're at the beginning of your playthrough for easy wins go with a friend's "Heracles" until you reach Part 2, Heracles can single handily destroy any enemies with his Bond Craft Essence and if they're high enough level can easily sweep, but if you're focused on wave clearing Morgan does help with that but you need to have additional buster damage support to help her reach the best potential. For the "Free 5 Star SSR servant Exchange" I can't say which is the best as I suggest picking a class you require if you're low on, "For example you don't own too many Sabers I suggest picking Altria Pendragon" but if you want an all round support then Waver is a good pick, as he can help with battery charging and he works with any team.
