I have something to tell you about the shells mate ! Don't throw them away ; they are good for pottery . Burn them on a fire then grind them into an ash powder , they will keep the pearl flakes . If you don't want to go this way then you cut them into pieces on a bandsaw so you have ready to use mosaic art elements , mother of pearl side or black one . Just an idea to clutter your garage with stuff ....lol

Blanching them out of the shell this way is how i've always done it also. I've heard leaving paua in kiwifruit overnight is good for tenderizing them further. Try cutting them into quarters then leaving them in worcestershire sauce to marinade and dampering in flour then into some beaten egg then into some breadcrumbs and frying in some garlic butter. Chur

I am so curious to try paua someday. My mum has an extremely open minded palette and this is the only thing she's ever eaten that she would never eat again. Also loving the accents :)

i find shelling them with the blunt handle of a spoon easier, followed by cleaning them in the sink using warm water then letting them sit for an hour while having a few cold ones, then IF they still need it, throw em in a plastic bag and tenderise with a rolling pin, dice then into a plastic bag with flour, salt n pepper, other spices etc... then fry in butter. MMmmmmmmm.......

and if you shell it right the paua meat comes away and leaves the guts still stuck to the shell, leaving only its teeth to remove with your thumb. :)

Here in the states I go diving for abalone once in a while when I have time. Our sizes we have been hauling in are about 21-23 cm. they sure are tasty.

oh no!. don't wash the paua, just cut very thin and place in a plastic bag with a little flower. shake and lightly fry in butter. put on white tasteless bread. done. the flower is only to hold the juices with the paua. bread is just something to eat it on. learnt that on the Chathams

Put cleaned paua in plastic bag, bash with edge of chopping board to 1cm thick or less. Add flour, salt, pepper. Shake. Fry both sides in smoking hot butter until golden and crispy on the outside, turning once. Any meat can be done like this - comes out like a crispy fritter but tender inside, like me. ;)

+Rueben Body Mckenzie yeah but you can usually tell if they are just legal by holding the measurer over the top, this way you dont damage them. If you nick them they bleed to death as they are heamophiliacs

C'est tellement nul: j'ai cru comprendre que l'aventure commence par se baffrer. Ensuite il faut vraiment avoir envie de s'admirer pour figurer sur un torchon pareil. Enfin, acquérir un film aussi nul pour le diffuser , c'edst pour moi abuser de son droit à l'image.
