Spending our childhoods and married life in the Dutch community gave us lots of traditions that we want to pass to future generations. One of those is the Christmas treat called Banket. It's a soft pastry filled with a delicious almond paste filling and given away at Christmas time. It is a long standing tradition. Join me as I teach you how to make this fabulous treat. Each batch makes 8 sticks but do not double the recipe. Make a separate batch if you want more than 8. These freeze really well also.
Dough:
1 pound butter
4 cups flour
1/2 tsp baking powder
1 cup cold water
Using a food processor or pastry blender, mix the cold butter with the flour. Add the baking powder and mix well. Add the cold water and form into a dough, kneading only enough to get the dough to stick together. Place in a loaf pan and store in a cold place until ready to use. It rolls best if made the day before. Dough will be fairly stiff.
Filling:
2 beaten eggs
2 cups sugar
14 oz almond paste. (Link below)
1/3 cup flour
Beat the eggs and sugar. Add the almond paste and mix until combined. Add the flour and mix.
Divide the filling and dough into 8 equal parts. Roll the dough into a 4 or 5 inch wide and 16-17 inch long shape. Roll the filling just a little shorter than the dough and place in the middle. Roll the short ends in first, then taking the side closest to you roll the crust over the filling. Get it tucked in nice and close and roll the rest of the way, using a little water on the end to seal the seam.
When all 8 are done, place on a half sheet pan that is well buttered. Egg wash with 1 egg (beaten with a little water) and prick each stick several times with a fork to let the steam out. Preheat the oven to 400-425, depending on your oven.
Bake for 12 minutes, rotate and switch shelves and bake for another 12 minutes.
When they come out of the oven, fix any filling that might have leaked out while they are still hot. Save that filling for a yummy treat!
Cool for a while on the pans then transfer carefully to a cooling rack.
Wrap in tin foil covered cardboard and wrap in plastic wrap. Add a bow and you have a delicious gift.

🙏🙏What a joy to see! I am Dutch and living in the south of the Netherlands; Ofcoarse we can buy this delicacy at every baker during x-mas times, but I never saw it actually being made....thank you, very sweet to see somebody appreciating 'Dutch culture' from very different background. Ah een banketstaaf from the 🇳🇱. Not just for Christmas but also for Sinterklaas. I do not make it myself but i buy it at the bakery and they also sell it in the grocery stores. They look amazing. Happy holidays greeting from the 🇳🇱🇳🇱

Unfortunately I’ve never tried a substitute. Dutch cooking definitely favors almonds in lots of desserts. Some suggest bean paste as it has the same texture. I believe you can get nut free almond flavoring. Thank you for watching and if you try it let me know how it works. ☺️
