Every person I ever trained I started by telling them YOU'RE the dishwasher! The machine is ONLY A SANITIZER!!!! The dishes need to be as clean as possible before being put into/through the machine. I always taught people silverware always goes through twice too. It actually touches your mouth so sanitation is at a premium.

You gotta put find who is your best sprayer person for the dishwasher spot. Very important because although everyone has to rotate, some people are much slower than others at spraying and you can’t ha d that during a busy rush. I’ve had many people who were slow and I had to take over. I gave these people several chances but they just refused to improve their speed.

5 years ive worked in this restaurant only seen 1 female dishwaaher and the managers always encourage us to help her lol. She got promoted few weeks later to prep. They do get some privilege working in a all Male and the workload is mostly heavy phyiscal labor.

Key thing Ive even told company managers/executives "The dishwasher is the sprayer, the machine is a sanitizer". Everything (from dishes, prep containers, preparing utensils are scrubbed/sprayed cleaned before entering machine. I came with my own 3 letter procedure. In ANY business there are the letters "S.O.P" most management, executives and owners would call this "Standard Operating Procedure". As a dishwasher, my version of S.O.P is "Speed, Organize, Prioritize". Never met anyone in charge who didnt love that.

I work at a place where we have two dishwasher that do clean and dirty sides when our schedule overlaps but we have 2 buildings and both have dishwashers so usually we’re working alone. But sometimes the person putting orders on the trays for the busters will help and grab plates as needed

When I worked at Tony Roma's they had that and boy do they make you speed your ass off because you have to make sure the dishwasher is washer is running all of the time. With those you can definitely get the dishpit cleared in no time

The Ecolab (Soap, Eco-Dry and Eco-San) would NEVER be placed on the floor. It would be in shelf. And the machine controls several functions. BUT technically the hoses from the containers do not go thru the control system. There would be a sorta pulley system connected to an outside panel of the control box which regulates the amount of liquid traveling thru the hoses into the machine. I have 20 years experience with these machines, working in such major corporate restaurants such as Olive Garden, Friendlys, Logans Roadhouse, Red Robin and now Applebees. Plus Im not cleaning the machine in such away that even Eco-Lab hasnt figured out. In my way it would be 99 brand new.

As a third a final comment. You said, you should have 1 person placing dirty items into the machine while a 2nd dishwasher is putting them away.. Your restaurant would need to be EXTRAORDINARILY BUSY to have 2 dishwashers for a shift. Yes sometimes a weekend or holiday shift. But even some if many places are only willing to pay/put 1 on shift if management knows there is NOT a major even or holiday that the restaurant will only be recieving normal business rather than a day, nignt, weekend, holiday, local event that would draw a LARGE crowd to your place.

Not a huge fan of little Dishwasher. One Rack at a time seems IMO Setting yourself up for Slowing Down. When Restaurants tends to get busy in time. I prefer 2 Racks of Dishwashing at the same time. Than both sets of Dishes gets washed Quickly. And Efficiently. Had my Experience with Small Machine. Not Good.

Remind them to use gloves because their hands will hurt AF and bleed. I worked as dishwasher in germany for 2 months with 1 week pause and it was enough for me! those assholes left me work from 11 00 - 23 30 every day apart from monday and i thought I was going to die. My back hurted badly and when i didn't have things to wash they pushed me to clean vegetables and these shit. That kitchen was hygienic nightmare and believe me you wouldn't like to eat there. Since then I prefer much more eating at home :D.
