Up here in Canada, you could field dress it, and let it freeze solid in the back of your truck because it’s -30 to -40 every day, and thaw it and butcher it a month later if you had to. (Not ideal) Personally we hang ours in a controlled environment for 24-72 hours and butcher it at a convenient time.
