*Bubbe's Apple Kugel* _for Pesach_ ¤ Preheat oven to 350 degrees Fahrenheit ¤ Quarter 3 Matzah sheets and soak in water, making sure all of it gets wet. ¤ 1/2 cup Sugar ¤ 1/4 tsp. Cinnamon ¤ 2 TBS. Margarine or Butter, melted in the microwave and left in glass measuring cup. (Vegetable oil may also be used) ¤ 3 eggs ¤ 1/2 tsp fresh lemon zest ¤ 4-6 baking apples, thinly sliced (reserve 12 slices for the top) *¤{Instructions}¤* ¤ Remove matzah from water, squeezing out the water. Leaving it moist, not wet. ¤ Beat the eggs and pour into the moistened matzah. ¤ Add lemon zest, sugar and cinnamon and the margarine/butter or vegetable oil. ¤ Add Apple slices and mix well. ¤ Line an 8x8 pan with aluminum foil and add mixture to pan; making sure that you spread mixture out to all corners. ¤ Add remaining apple slices on top for a more pleasant appearance. ¤ Bake 35-40 minutes, or until golden brown.

You're back. I'm so glad. I have your book and I absolutely love it. Even though I'm not Jewish I do have a very good friend who is and I cook your food for that family. I made Challah just yesterday and it was very good. Thanks, Bubbe, for everything you have taught me.

Was looking for a few new Passover recipes as I lost my cookbooks in a flood a few years ago. In my online searches this year, I learned that most kugel is not made with matzah. Not sure why… I make mine standard Passover kugel like this, but I also add raisins and nuts. Thanks for sharing!

Thank you Bubbe, so glad to see you're still in your kitchen giving us all some great lessons and great food. I am not Jewish but crazy about Jewish food and deli food, and every time I watch you it makes wish so badly I had a sweet little Jewish grandmother of my own. Thanks again Bubbe and Avrom.
