For the rice you used as a side for the PBJ sandwiches, add a little butter and a sprinkle of brown sugar to the cooked rice.

I think people underestimate the importance of building a pantry to save money. Eventually the pantry can feed you for a week or two to pay for an unexpected emergency, loss of pay at work due to illness or short lay off, etc. I also do apps like receipt hog and fetch to earn cash and gift cards. This week CVS gave me a $4 off $4 purchase that can buy food, the example this week would be 2 cans of Bumble Bee albacore tuna for $3.98. But I could spend a little more and get 2-8.9oz boxes of cheerios ($1.99 each-&1 coupon) and 1 can of the tuna for $1, the total is $5.98-$4-$1=$0.98. Both would be good emergency pantry items. Once you have enough pantry items put aside (1 month), plan a eat from the pantry week and use the money you would normally spend to buy super sale items to lower the overall cost of groceries. Some people will buy a 25-50lb bag of oatmeal, flour, beans, etc at 50% or more off store price at discounters or Amish grocery stores/outlets. You only go once or twice a year if you travel 1 hr or more to the outlet.

Lori, there have been a lot of days before, and since, finding your channel that I think I needed to hear someone say "I love you." I have always presumed this channel may not only be your ministry, but a way for you to provide instructions, ideas, explanations, so forth for your children when they head out on their own, and I've thought maybe this is why you end your videos that way, and also why when you say it, it seems so heart felt. Even though I think I'm not the intended target, I felt led to tell you I appreciate hearing it on hard days when I won't hear it from anyone else. 💛

Your budget meals are a life saver. My family struggles financially and these recipes look delicious. It seems the only meat we can afford is chicken. My kids are sick of chicken the same old ways. I will try these recipes. God Bless you and your family❤

I never knew you were supposed to eat syrup on pancakes until I got married and served my husband pancakes and blended peaches and he said what is this? Lol. To me it was breakfast to him it was nothing he wanted. So he had cereal and I had pancakes and peaches for days... lol. His lose... Mom always blended a can of peaches or cup of frozen strawberries from our garden and put them on our pancakes. Peanut butter and applesauce was also a favorite. Sometimes jam if mom had made some. Especially zucchini Jam.

Lori I grill my peanut butter and jelly sandwiches 🥪 for something different and they are so good! I know you didn’t buy broth but you could use bouillon cubes and water with your rice 🍚 and if you have any veggies 🥕 from the garden and make soup 😊thank you great ideas for saving money! 🌸🛒🌸

We throw veggie scraps in a zip lock and place them in the freezer. Once my bag is full I toss in a few bone in pieces of chicken with our veg scraps and make broth. I will refreeze my broth in Ice cube trays and toss 6-12 cubes into my dishes to add flavor. It is super budget friendly!!!

I appreciate the thought and time you put into this video. I also appreciate that it is realistic. You can’t have an very tight budget and have a huge variety. Snacks might have to be oatmeal or a little sugar and milk in leftover plain rice or oatmeal. No one will be hungry with this meal plan. Thank you💜

I love your recipes and ideas for meals!! I'm going to be doing several of them this week. I'm flat broke, car repairs took it all. I'm so thankful for my pantry. My parents grew up in the depression. Every year at Christmas, my grandma would get a bottle of maple syrup extract. Mom said that they would all be so happy. She made the syrup like you did but added like 1-2 drops of the extract to make it "maple syrup" she said it was strong stuff and only needed a tiny bit. You're doing a great job with your videos!

@coffeepotmommah7291 - mapeline. Years ago, visited parents of an old boyfriend and his mom made pancakes then realized that she had no syrup. She took 2 cups of sugar, 1 cup of water, boiled it about 5 minutes, added some butter and some Mapeline flavoring and it was great. I still make it today but mix in some real maple syrup. No high fructose corn syrup.

I like to shop with both hands, so I do this little trick. I use a carabiner through the side ring of my purse, place it on the cart seat with the zipper closed, and then discreetly attach it to the cart.

I really like the nacho idea! I make a similar recipe with rice as the base and everything on top (taco rice) . For added crunch and texture I like to add nachos on top. So good! I've also used some milk and brownsugar to make a simple rice pudding. Even the powdered stuff works great!

$.52/ person/meal WOW ! That is incredible. And, as you said the Cumin, Jelly, Peanut Butter, Rice, Flour, possibly the Yeast and Oatmeal will last more than 1 week. Since you had flour and butter you might have made Flat Bread instead of purchasing tortillas. A cup of Peas has 8 grams of Protein so buying certain Vegetables will not only add Vit C, A but also replace traditional proteins in meals. You and Dawn from The Minimal Mom, when you say I love you it feels like it is coming truly and sincerely from a friend. Thank you hugs from The Great State of Maine

Bananas would be great in the pancakes, in the oats or as a compote on either instead of a lot of the brown sugar. Just a little healthier, but great job w a limited budget ❤ I need more protein personally and can’t eat so many white carbs, but I know everyone is different. And I heard you on the full tummies goal 😊 that’s most important.

A suggestion for the rice as a side to your sandwiches. Add a bit of butter, brown sugar and cinnamon to the plain rice to create more of a dessert type dish to go with your sandwiches. Or if you have extra milk and eggs you could make a rice pudding. You could make a custard/pudding and ass the cooked rice to it. You created a good balanced meal plan to feed your family on a very limited budget.

We love pancakes! You can add PB to the top of a pancake, or make a caramel drizzle with your brown sugar and butter, I also smash 1 banana into my pancake batter for mini banana cakes!

This was a very good budget menu. Simple Spanish rice the way José showed me: add 1 Tablespoon of taco seasoning to 1 cup cooked rice and add a little butter. I would have sprinkled cumin or chili powder or brown sugar on that rice with the pb&j sandwich. José also showed me how to cook rice without burning it. Bring your water to a boil (1 cup of water and ⅓ cup dry rice for each person served. Makes 1 cup of cooked rice for each person. So if I'm serving 3 people I use 3 cups water 1 cup of rice. Our mom and younger sister moved from Yuma, AZ. Brother-in-law died three years ago and we lost our mom to Covid two years ago. So back to the Pacific NW for us!

Hello Lori I just want to tell you I love these budget meals that you come up with I am currently getting tons of tomatoes, cucumbers, lettuce, some peas and green beans we also picked 5 gallons of blackberries but I have a family of 5 adults and teens but my teens all eat more than my husband and I together I would do this budget and bulk it up from the garden as much as I could I would definately get as many extra eggs as I could afford I have one kid that weighs 130 pounds but he eats 12 times a day that kid has a hollow leg but thats teen boys for you. I can get a 5 dozen box of eggs for $4.70 at walmart and I would probably have to have at least a loaf of bread everyday. I have everything for all of these meals except the chickpeas my bunch doesn't like them very much but i would just add chicken and call it good. I also wouldn't need to buy jam because we make all of our jam and I have peach, strawberry, blackberry, blueberry and nectarine jam so wouldn't have to put that in the budget either. I love these vlogs thank you for all you do. Take care and feel better!

As a rule of thumb we don’t do spicy in our home(my gut can’t handle it) but I do provide things for anyone who wants to spice up their food. This is a nice rounded out menu for being a strict budget. We like to eat a lot of pasta salad in the summer, it is nice and cool but very filling. I do add cooked chicken to mine and cheese and just about every vegetable I have available, I use ranch dressing in ours because the rest of the family prefers it(I like either dressing). I can cook the pasta later at night and rinse and drain it and put it in the fridge and the next morning I add all the other ingredients and let it sit in the fridge all day. It will last us a few days too.

Sour cream can easily be substituted by Greek yogurt for added protein in each use! I’ve made the switch and I do not notice a difference of flavor. Tortillas are also super easy to make, and can be made with bacon drippings (free). Thanks for your videos!

Great video for those of us on a low budget. I use peanut butter on pancakes sometimes with a light drizzle of honey or syrup. Yum! I like your enchilada sauce and casserole. Just a thought, you could make it easy if you cooked a bunch of pancakes ahead of time and freeze them for quick meals. Can’t wait to try your bread recipe. Looks amazing! My dad grew up in the Great Depression and he said he ate peanut butter and banana sandwiches as a kid and loved them. If you had cocoa powder, you could add that to oatmeal or make chocolate syrup for the pancakes. All your recipes are great and am grateful for them as my adult son and I live on a very small budget. Unfortunately, my fridge freezer was on the fritz and I didn’t dare buy anything frozen this time. So we’ve been eating ramen and burritos & sandwiches. Got any ideas on shelf stable meals or do you already have a video? I’m new to this channel.

Put few tablespoon of baking soda in your pot after cooking it take the burn spot of the pans. 😊 cook it with water an your see that the black stuff is falling off the pot. I love watching videos like these.

Nice job! I am always looking for ways to cut our grocery budget. A few ideas from me to you. You could make pizza quesadillas for a twist and I think you had enough ingredients to make oatmeal cookies. 😋 our family loves snacks lol. I would also add popcorn kernels for another snack. You would definitely use all your butter then. Grocery prices are ridiculous now. Thanks for a good video.

The sour cream and jelly is a very European traditional way to eat pancakes, probably tastes great! Also, I never thought of adding brown sugar to pancakes, but brown sugar is white sugar with molasses added to it…that simple. My mother loved molasses on her pancakes (it’s good…way cheaper than maple syrup…Brer Rabbit dark was the preferred.) Just a hint for making your own bread…if you don’t have time to be around for the ‘rising time’, get a bread maker…and ours came working just fine and dandy from the thrift store for $6, and I see them all the time. It will make a loaf of bread in 90 minutes after you just put in flour, water, oil, salt and yeast…it’ll also do just dough, if you want pie crust, or prefer baking in your own pans. That’s a huge money saver (and tastes a lot better!!!) Thanks for cooking meals that aren’t full of processed foods (not everyone can do that due to lack of appliances, time, etc, I get that) and a lot of people have the basic equipment to cook less or unprocessed food, but never learned how to cook. Seeing it step by step makes a huge difference for so many!! (I’m an experienced cook and baker, and I still like to see a video.) First time here, enjoy your channel…and you have an awesome Aldi!!! They built a new on near us that’s like yours, and I like that there’s a little more space in the building, cause Aldi is awesome and it gets crowded! (Edited to add: not to make pie crust, I meant pizza crust, lol…don’t try pie crust in the bread maker!)

(Also, I wanted to add that being a super picky eater…you cook like a super picky eater would, which I love cause it means I don’t have to leave out 4 things that probably make it taste the way it should in order for me to agree to eat it!) That’s a high compliment from me. Additionally, not just for picky eaters only, but I’m seeing so many people who want to cook to save money and don’t know how…and simple dishes that are reasonably healthy gives those people building blocks…like the tortilla casserole…they may want to add in bell peppers or onions or hot sauce, maybe they like a different kind of cheese…fantastic!!! Take these ‘building blocks’ and add whatever you want (or take out what you don’t like…don’t like red enchilada sauce, use the green, or whatever sauce you like.) Videos like yours take away the intimidation factor for cooking, and give them basics to start with…dont start with Martha Stewart, start here and several other channels that do things similarly. Basic cooking and shopping education 101, that most people never got! (I got it…but do I meal plan and take the list to the store and shop from that? No…but I do shop from the sales, and with digital coupons at our local (not) Aldi, those are bargains…I grab and stock up. You’re also correct in that you added a few things that weren’t in the $55, but you weren’t going to use all of the stuff you bought…see butter on sale, grab 2 if you can, same with meat, canned…anything you’ll use and can store…if you only have $10 and a Dollar General is the only store you have access to? Use this to see ways to make things using a boxed/canned/frozen item. (Also, shout out to thrift stores for being great places for all kitchen utensils and small appliances and dish ware. For cheap. Just wash it. Ours tests and will take back any electronic device that doesn’t work. You can cook a lot without having any fancy appliances or tools. (Sorry, I’m sleep deprived and loopy, but I am glad I found your channel!) And thank you for putting in the time and effort to make your videos!

I was fortunate to be raised by a mother who was a first generation American, growing up during the Depression and WWII…her and my father knew how to stretch a dollar! (Even tho they had worked very hard, and weren’t short for money.) My mother had me at her side cooking every day. She worked full time and was a highly accomplished professional…and a highly accomplished cook, baker, seamstress (made most of her own clothes) you name it…she was superwoman…don’t try to live up to that! It’s not possible. But, from that, I learned how to cook everything from scratch, what was a bargain, what was a splurge, what was a waste of money…and I learned how to make a healthy, fresh, minimally processed, dinner for a family. A great meal was Chicken Pot Pie…which meant, we had a little of this, that, and the other thing left over that needed to be used (no wasting!!!) and she made pie crust from scratch, broth from scratch (usually had old gravy in the fridge that she revived) and it was the best!!!! You don’t have to do it all from scratch, I understand, some reading this may live under a bridge, or only have a microwave, that’s fine…you do your best to feed yourself and your loved ones any way you can. For people fortunate enough to have a roof over their heads and a means to cook, there are a ton of great ideas and ‘building blocks.’ Unlike baking (and there’s really easy overnight/no-rise dough recipes out there,) cooking is an art, not a science…you add and take out what you like and don’t like. You make it your own creation, and you start from the basic building blocks, and say…that’s decent…but it needs garlic/salt/hot sauce/seasoning/more vegetables…that’s how you learn. I don’t have a single ‘written down, step by step recipe” from my mother…she used her Joy of Cooking for reference, and her recipes were “put in this, add that, cut this like this, cook it like that, add a little of this, it should taste like this, bake/fry/cook until it looks done.” Thankfully, I have most of those memorized just from sheer non-stop teaching and repetition. Teaching your kids how to cook and budget money is such a valuable lesson for them to learn. You’re welcome…I talk a lot, and I type fast…but, I recognize a fellow picky eater…or one who is cooking that can’t afford the “extras” but the basics taste ‘good enough.’ And having a full or even half fully belly is always better than an empty one, as my Dad would say. So, basically, you’re doing on YT for many what my mother did for me. So, thank you!

what you can do is make your jam or jelly into “syrup “. heat the jam over low heat , add 1 tablespoon water or apple juice per 1/4 cup jam Heat until jam and water are completely mixed. Pour over pancakes or waffles. refrigerate any leftovers.
