This week , we are MAKING IT HAPPEN with a $75 meal plan that will easily feed even a large family all week long!
I am so excited to share the recipes with you, but first, let's talk about the grocery list and the costs of the food items we need to buy.
I did purchase all the things I used in this meal plan at walmart, unless I had them in my pantry. We will talk soon about getting our pantries stocked and ready for frugal meal planning and execution, but for now, I just wanted to be sure to let you know that there were a few items that I had on hand that I didn’t need to buy. I will list them here so that you will know how much I used and how much those ingredients cost for this meal plan (meaning-I didn’t add the cost of an entire bag of flour because I only used a few cups…)
Staple items used this week:
1 Cup Sugar ($0.22)
3 TBS molasses ($0.59)
1 C olive oil ($1.76)
3 C flour ($0.36)
Salt ($0.15)
Pepper ($0.15)
So, the total cost of the “staple” items comes to $3.23.
The rest of the groceries and the cost for each was:

1 Pkg. Mushrooms ($1.68)
1 Zucchini ($0.75)

1 Head Cabbage ($1.01)
1 lb Navy Beans ($1.28)
2 pkg pasta ($0.55)

1 Italian Seasoning ($1.00)

Here are the recipes I used this week! Home Made Biscuits 2 C Flour 3 TBS baking powder (eliminate if using self rising flour) 1 TBS salt 2 TBS reserved bacon grease, oil or butter 1 C half & half, diluted with water if desired, or milk Preheat oven to 400F. Combine dry ingredients. Blend in grease with pastry blender or fork. Stir in milk until well combined. Using hands, form into biscuit shapes. Place on baking sheet. Bake for 12 minutes, or until golden brown. Serve with sausage, if desired. Makes 12 biscuits Cheese Grits 6 C Water 1 1/2 C grits 1 TBS salt 1 C Shredded Cheese Boil water. Add Salt. Add grits and stir frequently. When grits are thickened, turn off heat and stir in cheese. Serve warm. Makes 6 servings Vegetable Broth 2 TBS Salt Discards of celery bunch 1 C carrots, or use discarded pieces if available 1 whole onion, quartered 2 cloves garlic 8 C water Combine all ingredients in large pot and simmer for several hours, until vegetables are cooked down significantly. Store in airtight container in the fridge for up to two weeks! Mushroom Rice & Chicken Soup 1 TBS olive oil 1 medium onion, chopped 1 lb carrots, chopped 2 cloves garlic, minced 1 lb fresh mushrooms, diced 1 C cooked chicken (optional) 1 C uncooked rice 5 C vegetable broth (see recipe above) 1/2 TBS salt 1 tsp ground black pepper 1 tsp italian seasoning Saute onion and carrots in olive oil until softened. Add all ingredients to stock pot, dutch oven or large soup pot. Stir well and cook on low-medium heat for 1 hour, or until rice is done. Kelsey’s French Bread (from The Prairie Homestead Cookbook by Jill Winger) 1 1/2 C warm water 1 1/2 tsp active dry yeast 1 tsp sea salt 3-3 1/2 C all purpose flour 1 lg egg, beaten with 1 tsp water Combine water & yeast in large bowl and stir until yeast is dissolved. Mix in salt and enough flour to form a stiff dough. Using hands, knead on a lightly floured surface 7-8 mins, until smooth and not sticking to your fingers. Place dough back into mixing bowl, cover with a towel, & allow to rise in a warm place 1 hour, or until doubled in size. Divide dough into two pieces. Form each piece into a rectangle. Fold in half lengthwise and pinch seams. Fold in half lengthwise again, and pinch seams. This should have created a long, thin loaf. Pinch seams to ensure loaf stays together. Form a loaf with other part of batch as well. Place a baking stone in the center of your oven and a metal pan on the rack underneath. Preheat oven to 450. Place loaves ona sheet of parchment and slash each loaf several times with a knife. Allow to rise in warm place for 15 mins. Lightly brush each loaf with egg wash. place loaves (with parchment)on hot stone. Pour 1 C hot water into metal pan (for steam). Bake 15-20 mins, until golden. You can find her cookbook (which I LOVE) here! Ham & Potato Casserole 1 lb ham, chopped 10 russet potatoes, chopped 1/2 C flour 1 C chicken broth 4 oz cream cheese 1 tsp italian seasoning 1 tsp salt 1 tsp ground pepper 1 12 oz pkg frozen sweet peas 4 oz shredded cheddar cheese Preheat oven to 375. Combine flour and broth in small sauce pan. Heat until thickened. Add seasonings to your taste preference. This is a cream of chicken substitute! Add cream cheese and melt. Combine ham, potatoes, peas, & cream of chicken mixture. Place in casserole dish. Bake at 375 for 75 mins, until potatoes are soft. Sprinkle cheese on top and bake for 5 mins to melt. Broil if desired to get more browning. Serve with roasted brussels sprouts, or your choice of vegetable! ENJOY!! Sausage & Cabbage Skillet 1 TBS olive oil 1 pkg smoked sausage 1 head cabbage 1 TBS salt 1 tsp black pepper Slice sausage into rounds. Brown in skillet, stirring frequently to prevent burning. While sausage is cooking, cut cabbage into bite-sized pieces. When sausage is browned, add cabbage. Cook on medium heat until cabbage is cooked down to desired tenderness. Serves 6. Yummy Chicken 4-6 chicken leg quarters 1 C onion, diced 1 C carrots, diced 1 C celery, diced 4 medium potatoes, sliced 3-4 C chicken broth 2 tsp salt 1 tsp black pepper 2 tsp italian seasoning Place chicken in pot. Sprinkle with salt, pepper & italian seasoning. Pour vegetables on top of chicken. Sprinkle with salt, pepper and italian seasoning. Pour chicken broth over vegetables. Top with sliced potatoes. Bake at 350 for 45 mins, until chicken is well done and vegetables are soft. Serve with your choice of green vegetables. Campfire Stew 6 C Navy beans, prepared 3/4 C Water 1 onion, diced 1 small can diced tomatoes 3 TBS sugar (brown sugar if available) 4 TBS molasses 1 lb Breakfast sausage, browned and drained Prepare navy beans according to package directions. Add water, onion, tomatoes, sugar, molasses and sausage in crock pot. Stir until well combined. Add beans and stir carefully, so as not to crush the beans. Cook on low for 6 hours. This can also be made on the oven in a dutch oven (lid on), baking for 60-90 mins at 350F. Ham & Cheese Pasta Bake 1 lb ham, chopped 5 oz Parmesan cheese, shredded 8 oz mozzarella, shredded, divided 1 lb pkg pasta, cooked 3 C half & half 2 tsp Italian seasoning Preheat oven to 350. Combine half and half with Parmesan cheese in small pot. Heat until cheese is melted and mixture is thickened. Combine all ingredients (only add 1 c mozzarella to bowl) in large mixing bowl and mix well to coat all with cheese sauced. Pour into baking dish. Top with remaining mozzarella and bake at 350 for 20 mins, until cheese is browned. Serve with broccoli or your choice of vegetable! Garden Rice Soup 1 Zucchini, diced 1 Bell Pepper, diced 1 Onion, diced 1 TBS olive oil 1 1/2 C Rice, uncooked 4 C chicken broth 1 can diced tomatoes 1 pkg frozen green beans 2 C navy beans 1-2 C Chicken, cooked (optional) 1 TBS salt 2 tsp ground pepper 2 tsp Italian seasoning Saute onion & bell pepper in oil until softened. Combine all ingredients in crock pot. Stir. Cook on low for6- 7 hours or high for 3-4 hours. To serve as a soup, you may need to add more broth toward the end of the cook time.

Maybe cook your chicken leg quarters first and take off the bone after cooked and you will have your broth also . Great recipes, real cooking 🥘 first time here ! Thank you 😊 very nutritious!

I have to give her credit where it's due - she comes up with different recipes from most of the other KZbin budget cooks. I've been cooking for decades but always on the hunt for inexpensive but tasty and filling recipes, and the majority are all rice-and-beans or pasta based meals. At least she uses reasonable portions of meat and shows you how to make the veggie broth. Reminds me a bit of my mother, as she had to make large, hearty meals for 10 people or more.

I came across your channel with your $55 Aldi run and I have gone down a rabbit hole watching your videos! I discovered how much I LOVE watching you cook, your perspective on making things work (like how to make milk out of half & half), and your light-hearted approach to cooking. Thank you for letting your viewers know it's okay to not be perfect and that putting whole foods and home-cooked meals on the table is what matters most. A head of cabbage here is $3.28...that parmesan wedge is $5.28 ...extra large eggs are now $9, yes NINE dollars (18 PACK Egglands that was $4.94 SMH)......not kidding. Some of these are double or triple what you pay. I did your list. No turkey sausage got hillshire polska kielbasa, mozzarella block was substituted with mozz shreds $2.22, and 2 packs of 5 lbs of chicken thighs for $6.97 a package is the closest I could find for the chicken. Also added a lb of butter $4.48 and stroked out adding the $9 eggs. Mine came out to $103.66. Since I am one person this will comfortably last me 3 weeks with the substitutions and smaller sizes on some stuff. That still makes it very good for me. I love these ideas you have. I so forgot about grits so I can't wait to try it with one of my precious eggs over easy on top. I am binging your channel, btw lol Groceries tomorrow so I am checking everything out with the store (Aldi and Walmart) apps.

It is true about people eating the same thing every day for breakfast. My Grandfather was a dairy farmer. Every morning my Grandmother made him two fried eggs, two pieces of buttered toast and a cup of coffee. The noon meal and evening was always different everyday.

You are so inspiring! I used to cook nearly everything from scratch besides frozen pizza growing up on a farm. Now I live in a city and "convenient" food has become a large part of our diet. I'm excited and inspired to get back to cooking from scratch, saving money on groceries, and gardening in my little backyard this summer.

We always had different dried macaronies. I would mix the different macaronies and make Mac n Cheese. The boys would tell me which of different macaronies they liked best and they seemed to eat more. 😊

Mushroom stems and onion skins are wonderful additions to vegetable stock. They give the stock great color and great flavor. I always save mine in a bag in the freezer. I always save my bacon fat, but never thought about using it in biscuits!

I home can chopped tomatoes and use them during the winter on tacos or burritos. It is cheaper than buying the green house tomatoes in the veggie section at the box stores.

When I am in a hurry, I make open roast beef sandwiches w/ mashed potatoes. I look for coupons/sale at Arby’s for their roast beef sandwiches. I ask them to keep the meat and buns separate cause I don’t want soggy buns. I slice the roast beef in a pot and make a brown gravy - then heat. I make a quick instant potatoes package. Toast the buns. Place a bun on a plate, add mashed potatoes then the gravy w roast beef on top. Add a side of vegetable and serve. My teenage boys liked this quick and simple meal that was cheap.

When I was a child, I loved home canned chopped tomatoes and shell or spiral noodles as a dish along with salt & pepper. It was filling and tasted like summer to me.

@@homemadesimplewithlori NYC 🗽... there's a children's fable called Stone Soup. A cat gets a meal by telling the village he had a stone that will make a delicious dinner. However, he needs: anyone have carrots? Potatoes? Onions? Ham bones? Apples? And in the end they all eat.

Caramelized onions go really well with the kielbasa and cabbage in the iron skillet as well. Sometimes my family adds egg noodles to the dish as well.

My grandma used to make the ham bake alllll the time; we usually incorporated sautéed onions and topped it with halved homemade biscuits, dollops of sour cream, and a little cheese. Seeing that meal made me smile😊

This was a great help- thank you so much for posting your grocery list, and making the recipes for us to see! I cook cabbage with sausage often- with one small difference- I always slice a Granny Smith apple really thin,as well as an onion, sauté them in the pan I used to cook the sausage, and together they just make t so delicious!

To peel garlic all you need to do is cut the ends off and then bang the garlic with the flat side of a knife.

I use squishy potatoes all the time. They have just started to dehydrate. I use a little extra liquid when I use potaotes that are soft.

cabbage casserole is also delicious and cheap to make. shredded cabbage, tomato soup, beef broth, cooked ground beef, chopped onion, salt, pepper and cooked rice. mix all together and put in 9 x 13 dish and top with some shredded cheese. 350 for about 1 hr. or until bubbly. :)

If you don't have buttermilk, you can make a clabberred milk. Just take 1 cup milk or half and half and add 1 Tbs lemon juice or white vinegar. Let it sit for a few minutes and you'll have a faux buttermilk. It works and is delicious! Easy peasy🤗

Your biscuits look like the ones my grandma used to make, I miss that so much. I am 66 and am a horrible cook. Wish I could cook and not have to throw it out because it is not edible. I buy sandwich stuff more than anything else. I am down to eating once per day. My husband is diabetic so when I buy groceries most is for him because of his dietary requirements.

Celery leaves are the best part!!! Can't imagine throwing them away, that's good food. Once you make broth chop up the vegetables and make stuffing with some old bread, biscuits, or pancakes. Cabbage core chop up and run it through the blender and add to your soup. What did you do with that delicious ham fat? That would have been delicious in the casserole. You're a creative cook, I'm from the south, too. I just toss out next to nothing. That chicken bone would had great flavor, easier to debone chicken once it's cooked. I simmer the chicken bones for hours for broth, the skin I fry it for chips.

If you need Buttermilk: Here are 4 ways to make it. 1 cup buttermilk = 1 Tablespoon white vinegar + enough milk to measure 1 cup 1 cup buttermilk = 1 Tablespoon lemon juice + enough milk to measure 1 cup 1 cup buttermilk = 1 cup plain yogurt 1 cup buttermilk = 1 and ¾ teaspoon cream of tarter + 1 cup of milk

I just found your channel! I love the way you scrolled all the prices for the items on the screen. All these meals look amazing. I'm doing a no-spend-uary challenge, so mainly cooking from pantry/freezer, with a $15/wk budget for fresh produce/dairy as needed. So far so good. Mostly, I'm doing the challenge to get over my over-spending grocery shopping habits.

I have a hate hate relationship with Walmart...lol. I hate that it's the cheapest place to buy things like medicine. And I feel forced to spend money there when I really don't want to. And the way they have made us as consumers work for them. Self serve check outs and then treating us like criminals when we leave, checking receipts etc...and prices have still gone up even tho they are supposedly paying fewer people...smh. end rant. Really good video

I love making my own veggie stock..I have a gallon size freezer bag in my freezer that I throw all my veggie scraps in..Once it's full I make up a big old pot and pressure canned up it for our pantry..I add a couple bay leaves, a few peppercorns and a tbsp of turmeric powder into the cooking stock. So yummy! So glad I found your channel..
