Thank you for the comment, Billy, about elegance and old world dishes. My parents grew up during the Great Depression and my mother said one thing they didn't lack were some really elegant and delicious meals made with items purchased with ration coupons and basic staples. Even today, you can make elegant things like a Pavolva or panna cotta or even a dark chocolate tart for just a few dollars and all of them will wow your guests or family.

I made whole live fire roasted lake salmon in Montana and served over rice pilaf. Rice pilaf is such a classic! I love those thin organic carrots you can buy (I have found them really cheap in some areas) brushed with duck fat over a bed of fresh thyme and seasoned with fresh ground pepper and salt. I cook them on parchment paper at around 375 for 20 or 25 minutes. I don't care if you think you hate carrots these carrots are top tier and you can eat the crispy thyme cooked with duck fat. /faint FYI any veg from okra to broccoli to mushrooms to ramps to fiddleheads to asparagus to green beans to radishes is going to be good on a bed of fresh thyme with duck fat. Try it, you'll like it! FFS try roasting kale with duck fat! OMG. Happy cooking everyone!

Absolutely beautiful. Super super great. I’ll definitely give this a try. I might like a little citrus flavoring on the carrots, maybe orange zest and a bit of juice. My college roommate, of Armenian descent, taught me to make rice pilaf. It must have broke vermicelli noodles. Yum. Can’t wait. Wish I could give more than 1-thumbs up. Here goes 👍👍👍👍👍👍👍

Great video Chef Billy. I’m trying all of these, and so far… they have yet to be nothing short of great. I thank you, and my family thanks you. Keep the under $25 going, but I’m wondering if you can pull a beef dish off for under $30-50. Time will tell. Thanks again, and I look forward to the next one.

There were items in this recipe that didn’t factor into the $25 - butter, garlic, onion, bread crumbs.
@ChefBillyParisi2 жыл бұрын
Correct and I mentioned that if it is a covert staple item then no reason to re-buy it at the store. See my other videos that I’ve done in this category as well
@zachkucera37932 жыл бұрын
The cost of those staple items is nominal. No one I know who does cooking on a budget factors in items that were already purchased because they are of a different economy rather than part of the economy at hand. Even if you did factor in those items, you are looking at, maybe, a dollar more. Again, nominal considering the payoff at the end.
@jeffreyrobert94602 жыл бұрын
@@zachkucera3793 I want to know where you shop that those items are $1. I don’t keep onions and garlic in my refrigerator as they are perishable. I buy them as needed for recipes.

Delicious looking. I’m going to try it. But I’m not sure you hit the budget mark. How much was all the stuff you already had? No disrespect, but just looking for accuracy.
