The leaf in the pho is called perilla leaf. Sometimes you'll see them translated as sesame leaves, but they don't grow on the same plant as sesame seeds. Very popular in east Asian cuisine. Often included in Korean bbq. The red variety is also what makes Japanese pickled plums(umeboshi) red.
@KylaA5952 Жыл бұрын
Is it the same as Shiso?
@naonao9528 Жыл бұрын
@@KylaA5952 Yep! Shiso is the Japanese word.

I'm Vietnamese. I started cooking when I was 7 because I love cooking and exploring ingredients. Pho never has perilla leaf in it, it would change entirely aroma of the dish. Only Thai basil, culantro and beansprouts as the side veggies (mostly use in the south Vietnam, northern pho doesn't have these side veggies). Green onions, cilantro, sliced white onions as toppings. I'd even say that Vietnamese cuisine just doesn't use perilla leaf. I got to know it from Korean BBQ. We have leaves with similar shape to perilla though, such as rau tía tô.
@naonao9528 Жыл бұрын
@@itsnotif.itswhen it was my understanding that rau tia to is a Vietnamese variety of perilla. It's good to be more specific though since there is a lot of variety in the flavors and appearance.

The owners of Trieu Chau are ethnic Chinese from Cambodia and speak Chiu Chow 潮州 dialect. It’s Chiu Chow style food catered to a Cambodian/Vietnamese palate. Glad you got to try it. It’s so good and the owners are very nice people. 😀👍🏽

I think the son is running it now? The husband passed away a couple years ago and the wife was running it for awhile and she finally retired from the business. My family used to live across from them. They've lived in the same neighborhood for decades. The wife is a really nice person, she used to give my mom fruits from her backyard all the time.

I live in OC. The variety of cuisine here is so amazing I feel as though I could eat at a great local restaurant every day of the year, and never eat at the same place twice. But I'm pretty shy, so if it wasn't for this kind of food tours, I wouldn't know what to order!

I love how descriptive you are on your food tours. The breakdown really helps. Your videos are what has encouraged me to expand what I call my elementary kid palette lol. I LOVE Japanese bbq over KBBQ, especially out in Seattle but now I have to go out to the OC and try it! The crispy rice and skirt steak with the sauce looked so yummy!

The purple leafy mint eaten with Banh Xeo is called purple Perilla Leaf. They also have green Perilla as well. A lot of people mistake it with Japanese Shiso leaf but they could be more different in flavors. The Perilla leaf is much more herby.

That leaf is called tia to in Vietnamese. It's a bit similar to shiso as others have noted but I wouldn't say its the same. For Japanese and Korean cultivars they come in either red or green and have a differing flavor between the two colors. In Vietnam I feel like I exclusively seem them bi-color (green on one side and red on the other). I find the flavor of Vietnamese tia to different as well, not as "herby" or "medicinal compared to Korean/JP shiso. In English it's called beefsteak plant.

He told me the people who own banh xeo boys are actually 2 dentists; banh xeo is their passion. Their original location is in downtown Santa Ana. Also, if you're ever back in the OC you should defs try shootz. It's fusion Hawaiian, their kimchi fried chicken tonkatsu is really good! And the musubi too. Anyways, glad you enjoyed your foodventure in the OC! ^°^

agree with passing on the phoholic at rodeo 39. coulda been a bad batch but location was very average in terms of broth flavor. i was actually put off by the flavor. tieguanyin is not "kinda oolongy" it is a literal oolong tea. one of the most recognizable oolongs. some batches can be very light on the roast so it can seem like a regular green tea to some people.
