Nice interview Adam. The man's a genius. Love how he has steam clean the copper stills, as well as his Vinasse procedure

Why does he use rain water? “Because it’s free”, I love that. I’ll be honest G4 is my favorite brand of tequila, not only because it’s additive-free and because it’s made the traditional way, and because it tastes very good. I went to a tequila tasting event recently and they were giving out free samples of several different brands, including G4. I was telling the promoters that one thing I like about that brand is that it has a very nice creamy mouthfeel. They told me that comes, mostly, from the 50/50 blend of rain water and spring water, which makes total sense. I haven’t tried Terralta yet, but I have heard a lot of good things. I love Filipe’s strategy of rebranding his tequila because of the availability of the rain water as the seasons change. Since he knew the tequila wouldn’t have the same flavor profile with the deep well water, it makes honest sense to just rebrand the tequila so they can keep selling it.

Filipe is an amazing guy! He is always willing to make time to talk to people who come to visit. i was fortunate to have him stop to visit while I was at my uncle's rancho next door to El Pandillo.
